You know how it is when you see a recipe and know that it's something you just have to make RIGHT away? Well, this happened this week. Nicole posted these popsicles on Monday and I had just cut a watermelon so it was perfect!
The fact that the heat index was like 107 certainly helped too.
The recipe called for greek plain lowfat yogurt but I only had vanilla. I think the vanilla watered down the watermelon taste a bit as the kids said they would like them more watermelon-y. I personally loved the vanilla.
This recipe fit my 12 small popsicle molds perfectly. I had 10 kids to enjoy them so they clearly didn't last long. They all loved them!!
They were super simple and I'm sure that they will be making their way around here more this summer!
Watermelon Frozen Yogurt Popsicle Recipe
Adapted from Prevention RD
1 1/2 - 2 cups seedless watermelon, diced (I used closer to 2 cups if not more)
3/4 cup vanilla yogurt, lite n fit
1 tbsp. splenda
Blend ingredients in a blender or food processor and pour into molds. Freeze for at least 8 hours or overnight. Remove 5 - 10 minutes before serving so they can easily be removed from their molds.
Total calories = 170
12 small popsicles = 14 calories per popsicle
