Ham and Potato Casserole

Ever since I've found that you can buy hard boiled eggs, I've been looking for more recipes and ideas to make with hard boiled eggs.  Cheesy ham, potato casserole is always a favorite.  I figured adding hard boiled eggs would make it even better and give it a breakfast flair.  Not that we ate it for breakfast.

I'm going through camera issues so these are not the best pictures. Trust me that this was good. Very good.

I did use a bit of velveeta cheese.  I know there are many who really don't consider it cheese. Well, it tastes good and melts great. Use a different cheese if you want but don't judge.

Ham and Potato Casserole Recipe

1/4 cup butter, cubed
1/4 cup flour, I used gluten free
1 tsp. salt
1/4 tsp. pepper
1 1/2 cups (12 oz) sour cream
4 oz. velveeta cheese, cubed
1 cup shredded colby jack cheese
6 hard boiled eggs
4 cups cubed cooked potatoes
2 cups cubed cooked ham
2 tbsp. dried minced onion
2 green onions, shopped

In a large saucepan, melt butter. Stir in flour, salt and pepper until smooth. Cook and stir for 2 minutes. Remove from heat and stir in sour cream and cheeses.  Cook and stir over low hear just until cheese is melted.  Remove from heat.  Stir in the eggs, potatoes, ham, and onion.  Transfer to a 9 x 13 in baking pan.  Bake uncovered at 350 for 30 - 35 minutes or until bubbly and edges are golden brown. Sprinkle with green onions.

Ham, Bean & Vegetable Soup in the Slow Cooker

It's ham season! You know, it's the time of the year where every grocery store has super duper cheap hams.  Well, we stock up and end up eating a LOT of ham.  That isn't unusual as my family eats a lot of ham.  All year long.  It's pretty much a staple in our refrigerator.  So you can see why ham season excites me so much.

We all know about my love for beans so I was excited when I found this 15 bean soup mix.  I didn't even think to snap a picture while the beans were still inside. I did not use the ham flavor packet though, for some reason, it seemed kinda creepy.  Plus, I had plenty of ham flavor with my ham broth.

I started out throwing 2 small ham hocks into the crockpot before bed. I let it soak all night and woke up to a delicious pot of ham broth and some super tender ham that fell right off the bone.

The next morning I chopped it all up and saved the ham broth.  I put in about 2 quarts of the ham broths back in the crockpot and started the soup.

I posted a ham and bean soup before that was mainly just ham and beans. Nothing wrong with that, it was good.  Very good actually.  This time, I wanted more veggies.  I wanted it to be thick and hearty.  So I added a bunch of veggies and it turned out fantastic.  Some of the small beans disappeared into the broth and the sweet potato basically disappeared as well. I loved this though because it made the broth super thick and it tasted amazing!

There still were plenty of chunks and it was amazingly filling.  One bowl fills you right up.  I have many hams left in the freezer so there will be many soups to be made this winter.  I plan to make this one again and again.  I don't think I would change a thing.

What will you be doing with your leftover ham bones?

Ham, Bean & Vegetable Soup in the Slow Cooker

Ham Hock (I had 2 small ones actually)
Water

3 cups leftover ham
2 quarts of ham broth (I used a bit less than 2 quarts)
2 onions, chopped
3 carrots, chopped
3 celery stalks, chopped
2 cloves garlic, minced
2 large potatoes, cubed
1 sweet potato, cubed
1 bag of dried beans - I used 15 bean mix
2 - 15 oz. cans diced tomatoes, with juice
Salt and lots of pepper, to taste

Enjoy your ham dinner.  While cleaning up after, take your leftover ham hock and throw it into your large slow cooker and fill with water.  Leave it in there overnight on low.  The next morning, strain the solids from the liquid.  KEEP THE HAM BROTH.  DO NOT DISCARD.  Pull any good meat off the ham bones and just toss the fat and the bones.

Rinse your beans in a strainer and throw into the now empty crockpot. Add just shy of 2 quarts of ham broth. You can add more later if you want (or if there is room).  Turn crockpot on high and let beans cook a bit.

Chop up all your onions, carrots, celery and garlic.  I cooked my veggies briefly on the stove but I don't think I needed to do that, I think they would have cooked just fine if I had just thrown them into the crockpot.  Add about 3 cups of leftover ham to the crockpot as well.

Wait a few hours before adding the potatoes or they just might turn to mush. Here is what I did. I had my beans and first veggies in the crockpot at about 10 am.  I left it on high until 1 and then added my potatoes.  I then turned it to low and cooked it until about 5 pm.  Everything was soft, mushy and delicious!!!

**Keep your ham broth so you can use it in future meals. You can put some in rice. I made some baked beans and used some ham broth. You can also use it in replacement for chicken broth in casseroles for a different flavor.

Broccoli, Ham & Cheese Quiche with Potato Crust

We enjoyed this breakfast casserole so much that I made it again the following week for a friend who was ill.  Sadly, after slicing the potatoes with my slicer, it broke.  The blades slipped and they just won't slice anymore.  So sad as I love to slice potatoes and make chips.  The one that broke was from Pampered Chef, it was quite old and had been well used.

The potato crust was fantastic!  So much better than the frozen hashbrowns that I so often use in a breakfast casserole.  This is extremely versatile and could be filled with many other things.  Bacon or red peppers would be awesome.  I even want to come up with a buffalo chicken version of some sort.

I loved it so much that I doubt that I will go back to the frozen hashbrowns again.  At least once I replace my potato slicer.

Broccoli, Ham & Cheese Quiche with Potato Crust
Adapted from Secrets from the Cookie Princess

3 medium potatoes
Cooking spray
Salt and pepper
1/2 cup onion, diced
1 - 1 1/2 cups broccoli florets
3/4 cups ham, chopped
4 eggs
4 egg whites
1/4 cup milk
1/2 cup shredded cheese (I used colby jack)

Spray a pie pan with cooking spray.  Scrub and rinse the potatoes.  Thinly slice the potatoes, arranged, slightly overlapping to cover the bottom and sides of the pie pan.  Try to cut the potatoes as thinly as possible.  Spray potatoes with a bit of cooking spray and season with salt and pepper.  Bake at 375 for about 10 minutes.

Cook onion with a bit of cooking spray, seasoning with salt and pepper.  Saute the onion for about 5 minutes.  Chop broccoli florets into small pieces and add to onions and saute for 3 - 4 minutes.

When potato crust is done, spread broccoli onion mixture, ham and cheese evenly over the crust.  In a medium bowl, beat together eggs, egg whites, milk and salt and pepper until combined.  Pour egg mixture over the crust and filling.

Return to oven and bake for 30 - 40 minutes or until a knife inserted in center comes out clean.  Remove from the oven and allow to cool slightly before cutting and serving.

Ham, Sweet Potato & Apple Casserole

Leftover ham anyone??

Here is the perfect recipe to use.  It almost seemed like dessert. I was sweet and full of fantastic flavors.

There isn't too much sugar in it but it was super sweet.  Super sweet in a good way though.  We all loved it and I can't wait to make it again.  I love having ham leftovers!

Ham, Sweet Potato and Apple Casserole Recipe
Adapted from Easy to be Gluten Free

3 large sweet potatoes (she used less, I love sweet potatoes though)
2 medium apples, cored and sliced, unpeeled
1 lb. cooked ham, cut into bite sized cubes
1 medium onion, rough chopped
1/2 cup dried cranberries (I used craisins and went heavy on them)
3/4 cup apple cider or juice
2 1/2 tbsp. cornstarch
2 tbsp. brown sugar
2 tbsp. maple syrup
1 tbsp. lemon juice
1/2 tsp. cinnamon (slightly heaping)
1/2 tsp. allspice (silghtly heaping)

Peel and chop sweet potatoes into bite size chunks.  Cook in water until just tender, not mushy.  Drain well and transfer to a big bowl.  Add apples, ham, onion and cranberries to the sweet potatoes; gently stir to combine.

Pour into a large baking dish. I used a 12 x 15 but a 9 x 13 would work, it would just be very full. (I did use a LOT of potatoes).

In a small bowl, combine apple cider and cornstarch and stir until combined.  Add the brown sugar, maple syrup, lemon juice, cinnamon and allspice. Stir.  Pour mixture over the casserole.

Cover and bake for about an hour at 375.

Sweet Potato Breakfast Hash

My blogger buddy Biz from My Bizzy Kitchen is the queen of breakfasts. She posts daily her meals and while all of her meals rock, it's the breakfasts that most often suck me in.  I'm a big fan of breakfast. Anytime of the day.

I've made this 3 times now, once with the ham and twice with black beans for a vegetarian version.  The sweet chili sauce is fairly high calorie but oh-so-delicious!  Paired with the rosemary and sweet potato makes for a fantastic breakfast!  Or dinner.

Sweet Potato Breakfast Hash Recipe
Adapted from My Bizzy Kitchen

1 large sweet potato (about 10 oz)
1 large apple, cored and diced
1 tsp. dried rosemary
2 oz. lean ham (or black beans for vegetarian version)
1 1/2 tbsp. thai sweet chili sauce
1 cup egg whites (or 4 eggs, beaten)
1 scallion

Peel and dice sweet potato and put in a nonstick pan along with a few tablespoons of water, cook until tender but not mushy, about 8 minutes.  Meanwhile, gather the rest of the ingredients; dice apple and chop ham.

Spray with a little cooking spray and add rosemary, apples and ham.  Saute for about 5 - 7 minute until apple is soft.  Push it all to the side and add egg and chili sauce to the other side and scramble eggs.  Add more cooking spray if needed. When eggs are cooked, combine with the sweet potato hash and serve. Garnish with scallion.

Chicken Cordon Bleu

Chicken Cordon Bleu is probably one of my favorite meals. Chicken with ham and melty cheese all rolled up with a decadent, delicious cream sauce.  What's there not to like?

I however, do NOT like to stuff chicken.  Pounding chicken is incredibly annoying.  I end up with chicken bits flying all over my kitchen and a row of children asking each other, "What's wrong with Mommy?", "What did the chicken do to HER!?"

Then when all rolled up, rarely does it resemble the beautiful stuffed chicken that I adore so much. It comes out uneven with goo just oozing out of it.  Not so pretty.

So forget pounding, squishing, rolling and scaring the children.  Simplify, people, simplify.  There is nothing wrong with a beautifully cooked chicken with a sliced of ham, a melted cheese slice and a scrumptious, rich, creamy sauce; sitting right on TOP of the chicken.  It might not be a gorgeous rolled up meal but it will save you a ton of time so you have more time to enjoy the meal.

This was an excellent meal.  We ate it with a French Onion Risotto that paired wonderfully with the chicken.

Chicken Cordon Bleu Recipe

6 skinless boneless chicken breasts
6 slices Provolone cheese (or Swiss)
6 slices ham
1/4 cup flour (I used gluten free)
1 tsp. paprika
6 tbsp. butter
1/2 cup dry white wine
1 tsp. chicken bouillon
1 tbsp. cornstarch
1/2 cup heavy whipping cream

Mix the flour and paprika in a small bowl and coat the chicken pieces.  Heat the butter in a pan and cook the chicken until browned on all sides.  Add the wine and bouillon.  Reduce heat to low, cover and simmer for 30 minutes, until chicken is no longer pink and juices run clear.  Remove chicken briefly, blend the cornstarch with the cream in a small bowl, add to the pan with the butter and wine and stir to combine.  Return chicken to pan, place a piece of ham on top of each chicken breast and then a piece of cheese.  Cover and heat on low until heated through.  Serve with sauce on top.

Hashbrown Casserole

Before I started this blog, I didn't cook much.  One thing I did make was a hashbrown casserole with ham.  My casserole contained a couple of cans of cream of mushroom soup, large amounts of sour cream, butter and a ton of cheese.  Very tasty but incredibly high calorie and not healthy at all.

I was pleased when I saw this hashbrown casserole recipe. It reminded me much of my former casserole, but a much healthier version.  Don't get me wrong, I wouldn't exactly call this health food but in comparison, it is much better.

A healthier, homemade version with out sacrificing taste at all. It was delicious.

The original recipe did not call for ham. I had made a ham for the family a couple of days earlier and this was the perfect way to use the leftovers and make it more of a meal.  The whole family loved it.

Hashbrown Casserole Recipe
Adapted from Under the Big Oak Tree

26 oz. bag of hashbrowns
2 cups colby jack cheese, shredded (8 oz)
10 oz. ham, cut into chunks
1/4 cup onion, minced
1 cup milk
1/2 cup beef stock or broth
2 tbsp. butter, melted
1/4 tsp. garlic powder
1 tsp. salt
1/4 tsp. pepper

Preheat oven to 425.  In a large bowl, combine hashbrowns, cheese and onions.  Combine, in a separate bowl, the milk, broth, 1/2 of the butter, garlic powder, salt and pepper. Mix well, then pour over the hashbrown/cheese mixture and mix well.  Heat the remaining butter in a pan.  Cook potato mixture, stirring occasionally, until heated through and all the cheese is melted, about 7 - 8 minutes.  Transfer to a baking dish and put in the oven to bake for 45 minutes to an hour.

Ham & Pineapple Fried Rice

Ham is a staple around here.  It's the one meat that the kids all agree on, all the time.

I loved the sound of this recipe as soon as I saw it. I just regret that it took me so long to make.

We all loved this recipe and for certain have it on the list to make again. Soon.

Ham & Pineapple Fried Rice Recipe
Adapted from Eat at Home

Brown rice, (I used 1 3/4 brown minute rice as that is all I had and it was enough)
1 onion, chopped
1 red pepper, chopped
1 tbsp. garlic, minced
2 cups ham, diced (I used 16 oz.)
3 tbsp. soy sauce
Pineapple tidbits, 20 oz. (drained and juice reserved)
2 eggs, beaten
2 cups frozen peas and carrots
Salt and pepper to taste

Cook the rice according to package. You can use regular or minute rice, I used minute rice and it worked fine.

Cook the onion and red pepper in cooking spray in a large pan for about 5 minutes to soften.  Add garlic, cook for another minute.  Add the ham, 2 tbsp. soy sauce, 2 tbsp. pineapple juice.  Cook for several minutes until ham is hot.

Pour the eggs into the skillet and cook, stirring frequently.  Add the peas and carrots and heat through.  Stir in drained pineapple.  Add the cooked rice, stirring to combine.  Add soy sauce, pineapple juice, salt and pepper to taste. I added another tbsp. of soy sauce and a couple more tbsp. of pineapple juice.
