Peach Mango Popsicles

Mangos just taste like summer, don't they??  Well, summer is coming to a close and I couldn't resist buying some mango's for some awesome popsicles.

All the kids here love mangos and they loved them as popsicles even more!  Even the little guy, we gave him a taste, then he grabbed the popsicle and ran!

Peach Mango Popsicles

2 large mangos, peeled and chopped
1 can of peaches, drained (or use fresh)
2 tbsp. sugar
2 - 3 tbsp. juice from peach can (or water)
1 1/2 tbsp. lemon juice (or to taste)
Puree everything in a food processor. Taste and adjust amount of sugar and water to taste. Pour into popsicle molds and freeze overnight. Enjoy.

Raspberry Popsicles

Another happy popsicle lover this summer! He didn't mind the seeds at all!  :-)

Raspberry Popsicles
Adapted from Recipe Boy

2 (6 oz) containers fresh raspberries
1/3 cup granulated white sugar
1 Tablespoon freshly squeezed lemon juice
1/3 cup water

1. In a food processor, puree all ingredients until smooth. Set a fine-mesh strainer over a medium bowl; strain- pressing on the solids to allow the liquid to come through into the bowl. Pour the liquid puree into a pitcher or a large measuring cup with a pouring spout (throw out the seeds that get stuck in the strainer). Pour the raspberry liquid into popsicle molds. Cover and insert the sticks.

or do what I did:

Stick raspberrys, lemon juice, sugar and water (without really measuring anything) into a food processor, taste for sweetness and adjust if necessary.  Pour into molds, freeze and eat.  Seeds and all.  Both ways work.  :-)

Healthy Strawberry Popsicles

I apologize for the boring picture, these were eaten before I captured all the smiling faces!  I'll be making them again for sure so I'll get more pictures!

The kids loved both eating these and helping me make them!  They all waited in line to be able to push the button on the food processor!  Then constantly asked me for the next 4 or 5 hours when they would be done!

Peaches and Cream Popsicles

It is certainly popsicle season!!  They are forecasting 115 heat index this weekend here in Minnesota.  So the kids are more than pleased to have some popsicles.

I am pleased that they are love eating healthy popsicles!

I simplified this recipe, she pureed some peaches and left some in chunks. If I were making the popsicles for me, I would have loved the peach chunks.  Twin 3 year olds have other opinions however.

"Ewwwww!!!!!  Chunks!!!!!"

So we just pureed the whole thing.  It worked and they were delicious.

I'm hosting Presto Pasta Nights this week, so email me your Pasta Recipes and I'll include them in a round up on my blog on Friday the 22nd.  Just include a link to Presto Pasta Nights and my blog and you're set!

Watermelon Frozen Yogurt Popsicles

You know how it is when you see a recipe and know that it's something you just have to make RIGHT away?  Well, this happened this week.  Nicole posted these popsicles on Monday and I had just cut a watermelon so it was perfect!

The fact that the heat index was like 107 certainly helped too.

The recipe called for greek plain lowfat yogurt but I only had vanilla.  I think the vanilla watered down the watermelon taste a bit as the kids said they would like them more watermelon-y. I personally loved the vanilla.

This recipe fit my 12 small popsicle molds perfectly.  I had 10 kids to enjoy them so they clearly didn't last long. They all loved them!!

They were super simple and I'm sure that they will be making their way around here more this summer!

Watermelon Frozen Yogurt Popsicle Recipe
Adapted from Prevention RD

1 1/2 - 2 cups seedless watermelon, diced (I used closer to 2 cups if not more)
3/4 cup vanilla yogurt, lite n fit
1 tbsp. splenda

Blend ingredients in a blender or food processor and pour into molds.  Freeze for at least 8 hours or overnight. Remove 5 - 10 minutes before serving so they can easily be removed from their molds.

Total calories = 170
12 small popsicles = 14 calories per popsicle
