Pumpkin Pie Smoothie

I love smoothies for breakfast and have them several times a week. Usually I'm pretty boring and an have a simple berry smoothie.  The other week I found this idea for a pumpkin pie smoothie.  I hadn't had a pumpkin smoothie in a long time and loved the thought of oatmeal in it!  I did process the oats first in the blender to make sure they were ground enough.  I ate these for almost a week straight for breakfast and loved how incredibly full I was.

Pumpkin Pie Smoothie
Adapted from I am a Honey bee

  • 1/2 cup pumpkin puree
  • 1/4 cup vanilla yogurt
  • 1/4 cup oats
  • 6 oz of milk
  • 1 teaspoon pumpkin pie spice
Combine all the ingredients in a blender and blend until the oats have been processed and all ingredients are combined completely. Makes 1 smoothie.

Here is the calorie breakdown for the 1 smoothie.  I added Body Bi Val protein powder so mine had about 12 more grams of protein and a whole bunch more healthy ingredients.  Seriously, this thing packed a punch and left me full for a long, long time!

Halloween Face Painting Designs: Ghost, Pumpkin, Candy Corn

When Halloween approaches, you know that face painting season is kicking into high gear. Try these easy, but immensely child-pleasing Halloween "cheek art" designs at class parties, fall festivals and homecoming carnivals.

Begin with good quality, water-based face paints. You can find them online or in some theatrical stores. A palette of six, good-quality face paints is priced around .00 and includes enough paint for 70 or more cheek art designs. Water-based face paints apply as easily as watercolors and remove cleanly with a paper towel and water.

Candy

For a small gathering of children, two or three small to medium sized paint brushes will be sufficient. A bowl of water to rinse the brushes and a roll of paper towels conclude the list of basic supplies.

In my opinion, the simplest design to paint is that of a ghost. The basic shape of the ghost is that of a triangle. With a brush loaded with white paint, paint a loose triangle by creating a wavy line to outline the ghost. Fill in with more white paint, dot on black eyes and a smile and the ghost is complete.

Nothing is "sweeter" than a face dotted with painted candy corn. The basic shape is a pyramid, with yellow on the bottom third, orange on the middle third and white at the peak. You can create a candy corn crown by painting the candies in succession along the forehead.

To paint a jack-o-lantern, begin with a circle or oval of orange paint. When the orange paint dries, add small triangles in black paint for the eyes and nose and paint a toothy smile in black as well. Add a green stem and your jack-o-lantern is complete.

The most important thing to remember when face painting is to have fun and keep it simple! Children aren't expecting a Picasso to be painted on their face. They simply love to celebrate the occasion and face painting is the perfect way to light up the face of any child.

Butternut Squash and Black Bean Casserole Recipe

I've been trying to eat less meat. I'm trying to eat healthier and I've been making changes in my diet.  I just don't think the we need to eat meat with every meal.  I still eat meat, I'm not going completely vegetarian but I only like to eat meat 2 - 3 times a week. Tops.  I would probably eat less if it weren't for my meat eating family.

This was an interesting recipe.  I wasn't sure how it would turn out as I was making it.

It was a casserole, yet kinda like a thick soup.  It had the flavors similar to chili, yet the next day, it thickened so I use it as taco filling.

However it was served, it was delicious.  It was flavorful, pretty, super healthy, gluten free and meat free.  All that I love in a meal.

Butternut Squash & Black Bean Casserole
Adapted from Fat Free Vegan

2 cans (15 oz) black beans, drained and rinsed
1 cup corn
1 large onion, chopped
1 bell pepper, chopped
2 tbsp. garlic, minced
2 tsp. cumin
2 tsp. ancho chili powder
1/2 tsp. chipotle chili powder (or to taste)
2 - 15 oz. cans of diced tomatoes, drained, LIQUID RESERVED

2 1/2 lbs. butternut squash, peeled and cut into thin slices or cubes

1 cup milk
1/3 cup cornstarch
1 tsp. salt
1 tsp. ground mustard
1 tsp. paprika

In a large bowl, combine the black beans with the next 8 ingredients and set aside.

Spray a 9 x 13 in. pan with cooking spray.  Lay 1/3 of the squash (or pumpkin) in the bottom of the dish and sprinkle lightly with salt and pepper.  Cover with 1/2 of the bean mixture.  Repeat layers with another 1/3 of the squash and the remainder of the beans.  Finish with the final 1/3 of the squash slices.

Combine the reserved tomato juice with the milk, cornstarch and spices.  Stir well and pour over pumpkin.  Cover tightly and bake for 30 minutes.  Remove the cover and bake for about 20 - 30 minutes more until sauce is thick and bubbly and the squash is tender.

Pumpkin Pie Baked Oatmeal Recipe

I tend to forget just how much I love oatmeal.  My brother eats it every morning and I often think, "I should eat more oatmeal..."  Yet, I usually just stick with my morning eggs.
I think I held onto this recipe for a long time before making it.  I don't know what took me so long, it was so good.  Really, really good.

The pecans made it seem almost pie like and just decadant.  I loved the taste, loved the texture and I totally need to make it again.

Pumpkin Pie Baked Oatmeal

1 cup pumpkin puree
1 cup apple cider
2 eggs

1 3/4 cups rolled oats
1 1/2 tsp. baking powder
1/4 tsp. salt
1/8 tsp. baking soda
1/2 cup pecan halves

Preheat oven to 350.  Spray deep dish pie plate or an 8 x 8 in. pan with oil, set aside.

In a large bowl, whisk together pumpkin, apple cider, eggs, milk, honey, maple syrup, butter, pumpkin pie spice, and vanilla until smooth.  Stir in oats, baking powder, salt and baking soda.

Pumpkin Cranberry Granola Bars

I love to snack.  I have never been good with just breakfast, lunch and dinner.  I love grabbing something quick in between meals.  Unfortunately, if I don't have something healthy, I end up eating just anything lying around.

Yea, not good.

I have been eating gluten free and oats have not been a problem for me.  Thank goodness because I LOVE oats and making oat bars.  I've made these several times and we just love them!

Great to have around when you're in that snacking mood!

Christmas gifts

Carlota is having a Christmas sale at school, so that they can raise some money for their trip in March. We have been thinking of making a few things at home, such as Christmas garlands, holidays postcards, jams and cookies, seed bombs (ready to throw in the garden and watch the flowers grow in the Spring), among other things.

Yesterday we made these jams, with pumpkin, orange, chopped almonds and cinnamon. They are really yummy, which is bad for my regime, but I can't help it, I really love them! We used cupcake liners to cover the lids and some Cath Kidston stickers - the embellished jars are a little extra that mean a lot to me - I like pretty things and honestly, I think they'll sell faster. :)

Ok, so now I'm off to make some orange jam!
