Cinnamon Pull Apart Bread

My family is crazy for bread.  They can't seem to get enough of it.  We make some sort of bread every week and my kids take turns helping me.  Punching the dough is the funnest part of course.  My daughter helped me make this bread.  When she was mixing the dry ingredients, I heard her say, "Two cups of SALT?  Really?"  I then realized that she was reading the directions wrong and wanted to add 2 cups flour, 2 cups sugar and 2 cups salt.  Glad I was there to catch the mistake!  We started over!

This month for The Secret Recipe Club I loved looking through Karens blog Cinnamon Freud.  I was pleased as punch to find this awesome Cinnamon Pull Apart Bread. I knew that they family would absolutely love it!  It was simple to make and the dough was really easy to work with.

Everyone loved it and they can't wait to make it again!  Thanks Karen for a fantastic recipe!

CINNAMON SUGAR PULL APART BREAD
Recipe from Cinnamon Freud

For the Dough:
3 cups all purpose flour, divided
1/4 cup granulated sugar
1 envelope active dry yeast
5 tablespoons warm water, divided
1/2 teaspoon salt
2 ounces butter
1/3 cup milk
2 eggs, room temperature
1 teaspoon vanilla extract
For the Filling:
1 cup granulated sugar
1/2 cup light brown sugar
1 tablespoon cinnamon
Pinch of salt
2-3 ounces butter, melted

In a large bowl combine 2 cups of flour, sugar, and salt. Set aside
In a saucepan combine milk and butter over medium heat.  Stir together over heat until butter is melted.  Let cool until mixture reaches 115-125°F. Stir in vanilla extract and 2 tablespoons water.
Combine 3 tablespoons warm water and yeast with a pinch of sugar.  Let sit until foamy, about 10 minutes.
Stir into wet ingredients.

Pour the wet ingredients into the dry ingredients and mix until just combined.  Add in eggs one at a time and mix until incorporated.  Stir in 3/4 cup of flour and stir for 2 minutes.
Place dough in a large greased bowl.  Cover and let rise in a warm place until doubled in size, about 1 hour.

In a small bowl mix together the sugar, light brown sugar, cinnamon, and salt for the filling.  Melt the 2 ounces of butter for the filling in a saucepan over medium heat until it turns a brown, 5-10 minutes.  Grease a 9 inch by 5 inch loaf pan.  Set aside.

Punch down the dough and knead in 2 tablespoons of flour.  Cover and let rest for 5 minutes.  Place on a lightly floured surface and roll dough out to a 12 inch by 20 inch long rectangle.  Brush with melted brown butter. Sprinkle cinnamon sugar mixture on top.
Slice dough into 6 vertical strips.  Then cut into 6 horizontal strips to make 36 total strips.  Layer the strips in the prepared loaf pan. Just kinda stack and layer them in there while the pan is tipped on its side. They don't have to be super neat, just push them in there. Cover and let rise in a warm place until almost doubled in size, 30-45 minutes.
Meanwhile, preheat the oven to 350°F.
Bake for 30-35 minutes until golden brown.  Run knife around the edges of pan.  Invert onto a plate and flip back over.  Serve warm.

Chocolate Chip Peanut Butter Banana Bread

I made this bread a month or so ago before fruit fly season kicked in.  During fruit fly season, bananas can't stay on the counter too long.  Those little buggers get in for just about anything no matter how clean every thing is kept.

So before fruit fly season came, I bought a whole bunch of bananas and purposely kept some for banana bread. I'd been holding on to this recipe for awhile now and knew it would be perfect for my bananas.

The kids loved this bread.  It didn't last long at all.  The kids wished I had more bananas to make another loaf.

Chocolate Chip Peanut Butter Banana Bread
Adapted from Cinnamon Spice and Everything Nice

2 cups flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 cup butter, room temperature
1/2 cup sugar
1/4 cup packed brown sugar
3/4 cup creamy peanut butter
1 cup ripe bananas, mashed
1 egg
1 tsp. vanilla extract
1 cup milk
1 cup chocolate chips

Preheat oven to 350.  Grease and flour a regular loaf pan.  In a small bowl, whisk flour, baking powder and salt together.  In a separate bowl, beat butter and sugars until combined. Mix in peanut butter and banana.  Mix in egg and vanilla, scraping down sides of bowl.  Add flour mixture and beat on low until combined. Pour in milk and beat on low until batter is smooth.  Mix in chocolate chips.  Add batter to pan and spread evenly.  Bake for 55 - 60 minutes or until the center springs back when pressed with a finger.  Cool for about 15 minutes and remove from pan.

Artisan Bread

My family eats a lot of bread. My oldest son especially loves bread and likes to help me make it often. He's helped with breadsticks, popovers, rolls, you name it.

I've made Biz's Artisan Bread twice now and we love it!  This time we added Italian seasoning and garlic to the bread and we loved it!

We made one loaf with half the dough and then made 2 pizzas with the other half.

Hubs and my 3 kids devoured the 2 pizzas in no time. The bread didn't last long either.

My kids said the pizza was like deep dish pizza.  I rolled it thin but it rose to make a puffy crust that they loved.

Italian Garlic Artisan Bread Recipe

Adapted from My Bizzy Kitchen

I make this into two loaves, or four 12 inch pizzas
  • 6 1/2 cups bread flour
  • 3 cups water
  • 1 tablespoon yeast
  • 1 tablespoon salt
    1 tbsp. Italian seasoning
    1 tsp. garlic powder
Mix the flour, yeast and salt together and pour in room temperature water.  I actually use my fingers to make sure all the flour is incorporated – I’ve used a wooden spoon before but have had lumps of flour after the 2 hour rise.
Put in a big plastic container with a lid.  Let sit for 2 hours to rise.   Shape your dough into 2 loaves and put on a piece of parchment paper.  Cover with foil and bake for 30 minutes at 450.  Remove the foil and finish for 15 more minutes.  Let cool before slicing.

Jalapeno Cornbread

We make cornbread a lot around here.  My son loves to make those little boxes of Jiffy muffins.  I'm sure he makes a box weekly.  I love cornbread because it's easy to make it gluten free.  There isn't a lot of gluten free bread that I like but I love corn bread.

Cornbread just seems to go with a lot of meals too.  Chili and cornbread of course is awesome but I make it with plenty of other soups as well.  It also goes well with many other Mexican or southwestern meals.  The kids don't like the jalapenos in it as much as I do but they still eat it.

What do you eat cornbread with?

Jalapeno Cornbread Recipe

1 cup buttermilk
1/4 cup oil or butter
2 eggs
1 cup cornmeal
1 cup flour, I used gluten free
2 tbsp. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
2 jalapenos, seeded and diced

Mix the buttermilk, oil and eggs in a bowl.  Mix the cornmeal, flour, sugar, baking powder and salt.  Mix the cornmeal mixture into the buttermilk mixture.  Mix minced peppers into the mixture and pour into a 9 x 5 loaf pan sprayed with cooking spray.  Bake for 375 for 30 - 40 minutes.

Bacon Cheddar Corn Muffins

Bacon just makes everything better, doesn't it?  I make several different kinds of corn breads but this one with bacon is one of my favorites. My son eats corn muffins all the time and he actually volunteered to make the bacon for these.  Nice. I'm pretty sure that he ate most of these.  I'm okay with that.

Bacon Cheddar Corn Muffins

4.5 oz. flour, about a cup
3/4 cup yellow cornmeal
1/2 cup (2 oz.) shredded sharp cheddar cheese
2 tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. ground cumin
1/4 tsp. salt
4 pieces of bacon, cooked, drained and crumbled
1 jalapeno pepper, seeded and minced
1 1/4 cups buttermilk
1/4 cup canola oil
1 large egg
Cooking spray

Combine flour and next 7 ingredients (through salt) in a large bowl, stirring with a whisk. Stir in bacon and jalapeno.  Combine buttermilk, oil and egg in a small bowl. Add to flour mixture, stirring just until moist. Line muffin tray with 12 liners and spray with cooking spray.  Divide batter among muffin cups. Bake at 375 for about 15 minutes.

Popovers

I have a memory of popovers from when I was really young. They obviously didn't make a regular appearance at meals because I remember them being special. Like for company or something.

I hadn't had a popover since.  Until now.

I've seen recipes now and then around the internet and always think, 'I need to make those!"  But never do.

Until now.

For The Secret Recipe Club this month, I was assigned NY City Eats. Lacy has a whole bunch of awesome recipes.  I seriously spent about 2 hours debating what to make. I have many printed that will get made soon for sure!

I had to choose the popover recipe when I saw it though.  They looked so easy.  I'm not much of a baker so I had my doubts.  I thought for sure they wouldn't resemble the popovers that I remembered at all. Boy was I wrong!  These came out perfect!  Crunchy on the outside and soft and hollow on the inside.  I so should have gotten a picture of them from the inside. I was so proud of them!

We all loved the popovers but I specifically had my son Jacob in mind when I made them. He's all about bread. It seems like all he eats is bread.  As expected, he loved them and at most of them.  I've actually made this recipe twice.  I meant to try to make a gluten free version but didn't get a chance. I have no idea if it would even work but I want to give it a shot. I'll let you know if it works. :-)

Popovers
Recipe from NYCity Eats

1 cup milk
1 Tbsp butter, melted
1 cup sifted flour
1/4 tsp salt
2 eggs, beaten

Preheat the oven to 450.
Have all ingredients at room temp. Butter deep muffin tin or popover pan and set aside.
Beat milk, butter, flour & salt just until smooth. Add eggs 1 at a time without over beating. Pour batter in pan filling cups only 3/4 full, and place in oven immediately.
Bake at 450 for 15-17 minutes. Lower temperature to 350 without opening door. Bake about 20 minutes longer or until popovers are golden brown & you can remove them from the pan without the outside walls collapsing.

Jalapeno Cheddar Corndog Muffins

I've been trying to cut processed food out of my life.  Trying, but not always succeeding.  These little babies tasted like an awesome corn dog and were perfect with chili.

I made half with the hot dogs and half without. That way I could rationalize having two muffins with dinner.  Of course I had to try them both!  I'm happy to say that they were delicious with or without the hot dog.

Jalapeno Cheddar Corndog Muffins
Adapted from As Good as Gluten

2 cups yellow cornmeal
1/2 cup water
1 1/2 cups milk
1 tbsp. lemon juice
2 tbsp. melted butter
1 egg
1 tbsp. sugar
1 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
10 - 12 pickled jalapeno slices, chopped
1 cup shredded cheddar cheese, 4 oz.
4 hotdogs, cut into thirds

Preheat oven to 375.  Grease 12 muffin tins with butter or cooking spray.  In a large bowl, combine ingredients from cornmeal to baking soda.  Stir well until no clumps remain. Fold in jalapeno pieces and cheddar cheese.  Pour about 1/4 cup batter into each muffin tin.  Place a third of a hot dog into the middle of each muffin tin, then bake for 20 minutes.

Cranberry Bread - Gluten Free

I still managed to find whole cranberries after the holiday season was over.  This bread looked too good to resist.  It wasn't originally a gluten free recipe but I just subbed my gluten free flour and it turned out just fine.  Maybe a tad crumbly but it didn't stop us from devouring it in record time.

This was a sweet bread with the slight tartness of the cranberries.  I only regret not making two loaves.

Gluten Free Cranberry Bread Recipe
Adapted from Katie's Cucina

2 cups gluten free flour**
1 1/4 cups light brown sugar, packed
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 large egg, beaten
3/4 cup milk
4 tbsp. butter, melted
1 - 12 oz. bag of fresh cranberries
1 tbsp. raw sugar

Grease and flour a 9 x 5 in. loaf pan.  Mix flour, sugar, baking powder, baking soda and salt in a medium bowl.  Meanwhile combine egg, milk and butter in a small bowl.  Add wet mix to dry mix and combine thoroughly then stir in cranberries.  Pour batter into prepared pan.  Sprinkle with raw sugar.  Bake until golden brown, about 1 hour 15 minutes.  Let cool for awhile and run a knife around pan to loosen bread.  Turn onto a wire rack to cool completely.

**This is how I make my gluten free flour blend. The basic recipe is 2 cups brown rice flour; 2/3 cup potato starch and 1/3 cup tapioca flour. Combine the ingredients together and then measure out however much you need.  I keep it on hand and use as necessary.

Lemon Yogurt Mini Muffins

Check out my Vitatops Giveaway here!!

These adorable muffins were awesome. The kids got to roll them in sugar which they loved.  Then we ate them up while warm.  Perfect summer muffin!

Lemon Yogurt Mini Muffin Recipe

1/4 cup lemon juice, fresh-squeezed
3/4 cup milk
2 cups all-purpose flour
1/2 cup sugar
2 + 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter, melted
1 egg, slightly beaten
1/2 cup non fat vanilla yogurt
1 teaspoon lemon zest
1 teaspoon vanilla extract
topping:
2 tablespoons melted butter
sugar for rolling muffins in

1. Preheat oven to 400 degrees F. Grease a 12 cup muffin pan or a mini muffin pan.

2. Add lemon juice to a large glass then add milk; set aside. In a large mixing bowl whisk together flour, sugar, baking powder and salt. In a separate large bowl stir together milk mixture, butter, egg, yogurt, lemon zest and vanilla (don't worry if it looks clumpy or curdled).

3. Make a well in center of dry ingredients and add wet, stir just to combine. Spoon batter or use an ice cream scoop to fill muffin pan. Bake minis 12-14 minutes and large 18-20 minutes or until a cake tester comes out clean. Cool pans on wire racks 5 minutes, turn out and brush tops with melted butter, dip or roll in sugar while still warm. Best eaten immediately. If they cool off and become sticky roll in sugar again.

Blueberry Muffins

I actually had some blueberries in the frig that needed to be used. Quickly.

This is rare as we go through a bushel of fruit each week and kids are scrambling for the last of it.  Actually I have no clue how much a bushel is but let's just say that rotten fruit just doesn't happen here.

Clearly it just wasn't blueberry week for the kids because by the end of the week, I still had most of a huge Costco sized container in the frig and no one around during the weekend to eat them.

Perfect time for blueberry muffins, don't ya think?

These were awesome and were eaten very shortly after they came out of the oven.

Now everyone wishes I had more blueberries.

Blueberry Muffins
Adapted from Brown Eyed Baker

1 cup whole wheat flour
1 cup AP flour
1 tbsp. baking powder
1/2 tsp. salt
1 egg
1 cup sugar
4 tbsp. butter, melted and cooled slightly
1 1/4 cups sour cream, light
1 1/2 cups frozen or fresh blueberries (I used fresh)

1. Preheat the oven to 350 degrees F. Grease a standard 12-cup muffin tin (or line with paper liners) and set aside.

2. Whisk the flour, baking powder and salt in a medium bowl until combined. Whisk the egg in a separate medium bowl until well-combined and light-colored, about 20 seconds. Add the sugar and whisk vigorously until thick, about 30 seconds. Add the melted butter in 2 or 3 additions, whisking to combine after each addition. Add the sour cream in 2 additions, whisking just to combine.

3. Add the berries to the dry ingredients and gently toss just to combine. Add the sour cream mixture and fold with a rubber spatula until the batter comes together and the berries are evenly distributed, 25 to 30 seconds. Small spots of flour may remain and the batter will be very thick. Do not overmix.

4. Using a large spoon or a cookie scoop sprayed with nonstick cooking spray, divide the batter amount the muffin cups. Bake until the muffins are light golden brown and a toothpick or thin knife inserted into the center of a muffin comes out clean, 25 to 30 minutes, rotating the pan from front to back halfway through the baking time. Immediately remove muffins to a wire rack and cool for at least 5 minutes. Serve immediately or at room temperature. Store leftovers in an airtight container at room temperature.

Strawberry Lemonade Muffins

I found these on Lisa's blog and knew they would be perfect for a Saturday morning meeting.

I LOVED the lemon flavor and was glad I took her advice and upped the zest.  These came out perfect!

Strawberry Lemonade Muffin Recipe
Adapted from Sweet as Sugar Cookies

2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
6 tbsp. unsalted butter, room temperature
1 cup sugar
2 tbsp. lemon zest (I used 4 lemons)
2 eggs
1/2 cup freshly squeezed lemon juice
1 1/2 cup finely chopped fresh strawberries

Preheat oven to 500 degrees.  Line or grease mini muffin cups.

Rub the zest into the sugar with your fingers until the sugar is moistened and fragrant.  Cream the lemon sugar with the butter.  Add the eggs and vanilla.  Mix the lemon juice.

Combine the flour with the baking powder, baking soda and salt.  Add to the wet ingredients and stir until just combined.  Fold in the chopped strawberries quickly.

Spoon batter out into prepared muffin cups.  The muffin cups should be fairly full. Bake for 5 minutes at 500 degrees, then immediately lower the temperature to 350 degrees. Continue baking for about 5 minutes.  If you are making regular muffins, the time will be longer.  Turn muffins out onto a wire rack to cool completely.
