Very Veggie Taco Chili with Guacamole in the Slow Cooker

Don't you just love to use the slow cooker?  Throw it all in and come home to a fantastic meal.

I used more veggies this time.  I love packing as many veggies as possible into things. If I leave too many chunks, I get too many questions as to what is what.

This time I pureed the zucchini and carrots and half the onion.  This made for a rich, tasty, thick sauce. And no questions about what all the chunks were.

I ran out of taco chili seasoning so I made some more.  I always make my own, it's nice to know exactly what is in there and I like to be able to make changed if I like.  I make a decent size batch and use it for a couple of months for tacos and chili.

I also couldn't resist whipping up a batch of guacamole to go along with the chili.

Day 3 of my 30 days of vegan recipes.  Keeping this vegan, I opted not to put my usual cheese and sour cream on it.  It is so flavorful that nothing else was necessary and I didn't miss them a bit.

Very Veggie Taco Chili Recipe

2 cans black beans, drained and rinsed
2 cans kidney beans, drained and rinsed
2 cans pinto beans, drained and rinsed
4 garlic cloves, minced
1 zucchini, grated
2 carrots, grated
2 medium onions, chopped
2 green or red peppers, chopped
2 jalapenos, diced
1/3 cup taco/chili seasoning.*  Or 2 taco seasoning packets
3 cups frozen corn or about 2 cans, drained
1 - 15 oz. can tomato sauce
2 cans diced tomatoes
1/3 cup cilantro

Add beans, tomatoes and tomato sauce to slow cooker.  Put zucchini, carrots, garlic and jalapenos in food processor. Or just grate or mince finely. Add to slow cooker.  Add onions, peppers and taco seasoning to slow cooker and cook on low for about 5 - 7 hours.  Add corn and cilantro and cook for about 15 minutes more.

Serve with:
Guacamole
Jalapeno Cornbread

*Taco Seasoning Recipe

1/3 cup chili powder
3 tbsp cumin
1 tbsp. garlic powder
1 tbsp. paprika
1 tbsp. salt
1 tbsp. pepper
1 tsp. coriander powder
2 tsp. onion powder
2 tsp. oregano
1/2 tsp. red pepper flakes

Mix together and store in a covered container. Use for chili or tacos.

Sweet and Tangy Chili Recipe

Another chili?  Yes, another chili!  Chili is incredibley versatile and can be made so many ways. And by golly, I am determined to try as many as possible!

Did I really just say, "By Golly?!"

The red wine with the balsamic vinegar add a wonderful tang that is perfect in this chili.  The cinnamon and the other flavors blend together perfectly!

Throw it in the slow cooker and come home to an awesome meal.

Sweet and Tangy Chili Recipe

2 lbs. ground turkey
2 onions, chopped
2 peppers, chopped
1 jalapeno, chopped
2 tbsp. garlic, minced
1/3 cup balsamic vinegar
2 tsp. beef bouillion
1 (15 oz) can of tomato sauce
1 cup ketchup
1/2 cup water (or more if desired)
3/4 cup red wine
2 (15 oz) can black beans, drained and rinsed
2 (15 oz) can pinto beans, drained and rinsed
1/4 cup + 2 tbsp. chili powder
1/4 cup + 2 tbsp. brown sugar
2 tbsp. paprika
2 tbsp. cumin
2 tsp. cinnamon
Salt and pepper

In a large saucepan, brown ground turkey.  Add onion, peppers, garlic and jalapeno and cook for about 5 minutes.  Pour ground turkey mixture into a large crock pot.  Add the remaining ingredients and stir thoroughly.  Heat on low for at least 4 hours, I cooked mine for more like 7 hours. Everything is cooked, you're just getting the flavors to come together nicely.

This makes a huge batch.  It freezes well if you want to freeze half for another meal.

Next Day Chili

Chili is one of my favorite things to have in the refrigerator as a leftover.  This chili intrigued me as you make it the day before and purposely eat it the next day.

I will have to admit, I did sample some the same day as cooking and I didn't notice a huge difference from the day after.

I loved the chorizo meat. I don't eat it very often and I forget how incredible the flavor is in food.  Don't let the long list of ingredients scare you off, it came together easily.

Crackers and chili is one of my favorites, I prefer it to the traditional cornbread.  These are Mary's Gone Crackers gluten free crackers and they were fantastic!

Next Day Chili Recipe
Adapted from Veronica's Cornucopia

2 lbs. ground beef, 93%
10 oz. chorizo
1/2 lb. bacon
1 tbsp. bacon grease
1 can chili beans, undrained
1 can kidney beans, drained and rinsed
1 large onion, chopped
2 tbsp. garlic, minced
2 tbsp. cumin
1 tbsp. oregano
2 tbsp. paprika
3 tbsp. black pepper
2 1/4 tsp. salt
1 tsp. sage
2 tbsp. red wine vinegar
2 tbsp. Worcestershire sauce
3 - 5 tbsp. hot sauce, depending on taste
1/2 cup chili powder
1 tsp. coriander
2 tbsp. maple syrup
1 - 2 cups chicken broth, depending on desired thickness

1 (6oz) can of tomato paste
1 cup tomato juice, I used V8
Red pepper flakes to taste

In a very large pan, brown ground turkey and chorizo, drain and set aside. Slice bacon into 1 inch pieces and cook bacon until crisp, set aside on paper towels to drain. Take 1 tablespoon of the bacon grease and add it to the turkey/chorizo mixture. Add all remaining ingredients, except bacon, to large pot. Simmer for 3 hours, stirring occasionally and tasting to adjust salt, pepper, chili powder and red pepper flakes to taste.

Let cool for an hour or so and then refrigerate overnight. Refrigerate bacon separately. Simmer again the next day for 2 - 3 hours, adding the bacon the last hour. Now it's ready to serve!

Quinoa Chili Skillet

I'm always looking for new ways to use quinoa.  It's a wonderful grain that is super healthy, versatile and extremely filling and satisfying.

Pairing quinoa this time with chili proved to be a delicious choice.

I put my cup of quinoa over a sweet potato.  The sweet potato soaked up the juices and tasted fantastic!

Quinoa Chili Skillet Recipe

1 cup uncooked quinoa, rinsed
2 cups water

1 lb. ground turkey, lean
1 large onion
2 tbsp. garlic, minced
1 jalapeno, seeded and minced
1 tbsp. chili powder
1 tbsp. ground cumin
2 - 15 oz. cans diced tomatoes
2 - 15 oz. cans black beans, rinsed and drained
1 green pepper, chopped
1 red pepper, chopped
1 zucchini, chopped
1 tsp. oregano
1 tsp. parsley
Salt and pepper
1 1/2 cups frozen corn, thawed
1/4 cup chopped fresh cilantro

Bring the quinoa and water to a boil in a saucepan over high heat.  Reduce heat to medium low, cover and simmer until the quinoa is tender and the water has been absorbed, about 15 - 20 minutes.

Heat a large pan and cook ground turkey. When the turkey is almost done, add the onions, garlic and jalapeno and cook until softened and ground turkey is done.  Season with chili powder and cumin, cook for about a minute.  Stir in the tomatoes, black beans, green pepper, red pepper, zucchini, oregano and parsley.  Season to taste with salt and pepper.  Simmer until the peppers are tender, about 20 minutes.

Add the corn and quinoa and heat through.  Add the cilantro and serve.

Cold days call for hot meals.  This chili will heat things up in more than one way. It wasn't too spicy but it did leave a nice zing in your mouth.

Nice and thick.  That's how I like my chili.  I loved all the lentils in this.  I don't make lentils enough and I need to start making them more!

Spaghetti & Pinto Bean Chili

Is it spaghetti? Is it soup? Is it chili?  These were the questions that I got as I was making this.  The skepticism filled the room.  Do I use a fork?  Do I use a spoon?

Yes, to all the above! Just eat it!

Well, despite the skeptics, they all loved it.  I made a big batch and brought some to my dad too and he enjoyed it as well.

Despite Kristen from Holy Cannoli calling it Three-Alarm Spaghetti, it really wasn't spicy. It was flavored nicely and had just the right amount of heat.  Certainly you could up the heat by using a hotter taco sauce, we used mild and it was perfect.

Spaghetti & Pinto Bean Chili
Adapted from Holy Cannoli Recipes

2 large onions, chopped
2 red peppers, chopped
4 cups water
1 cup taco sauce
1 1/2 tbsp. chili powder
1 tsp. salt
1/2 tsp. ground cinnamon
2 (15 oz.) cans diced tomatoes
2 (15 oz.) cans tomato sauce
1 (7 oz) can diced green chilies
2 cans of white beans, drained and rinsed
8 oz. spaghetti, broken into thirds (I used gluten free)
Sour cream (optional)

In a large pan, cook onion and peppers in cooking spray for about 3 - 5 minutes.  Stir in remaining ingredients except for spaghetti, beans and sour cream.  Heat to boiling.  Reduce heat to simmer and cook for 5 minutes, stirring occasionally.

Stir in uncooked spaghetti & beans. Heat to boiling.  Cook uncovered 8 - 10 minutes, stirring occasionally until pasta is tender. Top individual servings with sour cream if desired.

Chili Dog Casserole

If you're looking for a super healthy recipe, just turn away please. I promise we will be back to regular scheduled healthy recipes later.  But for now, I give you this. Chili Dog Casserole.

I could have and probably should have used turkey dogs, they are lower in calorie and healthier. But nope, just used regular old bun length hot dogs.

I also should have used a nice healthy homemade chili.  But nope, canned stuff with tons of sodium was used here.

I also meant to reduce the cheese. I reduced the cheese in almost all my recipes.
But nope, not in this one.

The only thing here that could resemble healthiness is the whole wheat tortillas. But look what they are buried in!

I gotta tell you though, this rocked. It was GOOOOOD.  I wouldn't recommend this on a regular basis unless you are a marathon runner and can afford the calories, but for an every once in awhile treat, it was good.

I do think that should when I make this again, I will use homemade chili. I hadn't had canned chili in a thousand years so I forgot how plain it was.  I wasn't impressed. This would be great with leftover homemade chili.

Corn Dog Casserole Recipe
Adapted from Allrecipes

2 (15 oz.) cans chili with beans
1 can Rotel tomatoes with green chiles
1/2 onion, chopped
8 hotdogs
8 whole wheat tortillas (corn tortillas if gluten free)
8 oz. shredded cheddar cheese

Mix chili and tomatoes in a bowl and mix until combined. Spread about 1 cup of mixture on the bottom of a 9 x 13 in. pan.  Lay tortillas flat, spread about a tablespoon of chili mixture, a bit of onion and a small bit of cheese (a tablespoon maybe) on bottom of tortilla, lay hotdog on top and roll inside tortilla. Place in baking dish, seam side down.  Continue with all tortillas. Top with remaining chili mixture, onions and remaining cheese.  Cover with foil and bake at 425 for about 30 minutes.

Cabbage Patch Kidney Bean Stew

Talk about your hearty, delicious stew!  Whew! This had it all.

Hubs wasn't sure about the cabbage but didn't even notice it. We all loved it.

It was quite mild. If you like things heated up, you could add a can of green chiles or maybe some hot sauce.

I made this awhile ago and am just now getting around to posting it and I'm so wanting to make it again!

Cabbage Patch Stew
Adapted from Tasty Traditions

1 lb ground turkey browned (optional, or use soy crumbles)
1 large onion, chopped
1/2 head of cabbage, chopped
2 (15 oz) cans of diced tomatoes
2 (15 oz) cans kidney beans, drained and rinsed
1/2 cup ketchup
2 tsp chili powder
Salt and pepper to taste
Brown ground turkey and onions in a pan. Add to crock pot. Stir in remaining ingredients; mix well. Cover and cook on low for 4-6 hours or until cabbage is tender.
