Buffalo Chicken Grilled Cheese Sandwich

I remember grilled cheese night as a kid. It was just me, my dad and my brothers.  My dad would cut the crust off of two sides of the bread.  He'd stagger the pieces of bread so we wouldn't have as much crust on the sandwich.  So nice, right?

One of my brothers would butter the bread, the other would open up cheese slices. Yup, we used the cheese in the little plastic packages. I was the oldest so I'd be the one actually making the grilled cheese. Our little assembly line was fun and resulted in one of my favorite dinners.

Well, my tastes have changed a bit over the years.  We no longer use the processed american cheese and I like to keep all the crust on the bread.  I also enjoy a little kick with my sandwiches, know what I mean?

This has a lot more than just cheese on these sandwiches but it's still a grilled cheese to me.  This is ooey gooey cheesy but with a buffalo kick with the chicken.  The veggies give it that bit of freshness and bite.  So, so good. Looks like we might have to start a new grilled cheese tradition around here.

Buffalo Chicken Grilled Cheese Sandwich
Adapted from Closet Cooking

2 cups cooked shredded chicken
1/2 cup Franks buffalo sauce
1/2 cup Ranch dressing
1/2 cup carrot, grated
1/2 cup celery, sliced
4 cups cheddar cheese
butter for the bread

Mix the chicken, hot sauce, ranch, carrot, celery and onion in a bowl.

Butter the outside of each slice of bread. Throw bread on a hot pan, butter side down.  Top with a pile of shredded cheese, then a scoop of the buffalo chicken salad and then more cheese. Top with the other piece of bread, butter size up. Carefully flip sandwich until golden brown on both sides an ooey gooey all over.

Jalapeno Cornbread Grilled Cheese with Black Beans & Chipotle Caramelized Onions

Best. Sandwich. Ever.

Oh my, I knew it would be good but I took a bite and my eyes rolled back in my head and I was swallowed by pure comfort.

The flavors are amazing together and will leave you wanting more and more. And more.

Seems like a lot of ingredients but with a little planning, it isn't too hard.  I made 2 loaves of cornbread and used one with Chili the day before.  We used the leftover Refried Black Beans for bean burritos and taco salads for a couple of days.  The Chipotle Caramelized Onions are just heaven on a plate and go with anything you want to put them on.  So don't be intimidated by the amount of prep.  Seriously, it's worth it.

This is a grilled cheese. So of course you start with bread, butter and cheese.  But the Jalapeno Corn Bread has SO much flavor, it's not JUST bread.

Once you top the bread and cheese with the caramelized onions and chipotle black beans, the smell will start to drive you crazy.  The cheese will start to melt and get all ooey gooey and your mouth will start watering.  Just sayin'.

The jalapeno corn bread is awesome by itself but butter it and grill it and wow!  It just looks amazing, doesn't it?

The sandwich is awesome by itself but top it with some amazing Guacamole and it turns into a masterpiece.

Ok, so it's not the a pick it up and eat it kind of sandwich.  Even though it requires a knife and fork, it is still the best sandwich ever.

Jalapeno Cornbread Grilled Cheese with Chipotle Caramelized Onions, Black Beans and Guacamole Recipe
Adapted from Closet Cooking

1 loaf Jalapeno Cornbread
1 batch Chipotle Black Beans
1 batch Chipotle Caramelized Onions
2 cups cheddar cheese, grated
4 tbsp. butter, softened
1 batch Guacamole

Heat a pan over medium heat.  Butter one side of each slice of cornbread. Put one (or two) of them butter side down in the pan.  Sprinkle on some cheese, followed by the onions, a dollop of black beans, more cheese and bread with buttered side up.
Grill until golden brown. Carefully flip and continue grilling until the other side is golden brown and cheese is melty.  I'll warn you, this is messy business.  I opted to just grill the other piece of bread and place it on top of the sandwich.  Therefore, no flipping necessary.  It's up to you.  I wanted a pretty sandwich.  :-)
Top with guacamole and cilantro.

That Madras Place, adyar, chennai

Once Bitten, Twice shy..
Twice bitten, lifetime wary!!

Well, looks like this is what I need to follow for this particular place.

Let me take you back in time, not too long ago, two friends headed out to lunch, and it was one girl's Happy Birthday.. We enjoyed a relaxed time at the spa and then for lunch, decided to try out the new place in town. It was called "That Madras Place" and is located in Indira Nagar, Adyar, in the road opp Nilgiris [Ambica appalam signal]. We found the place, walked int to see a huge wall with graffiti of all sorts, eclectic furniture, mix and matched chairs and cushions. Quite liked it as we were still hungover from our Jaipur trip..

Found a table, and scanned the single page menu to identify dishes that we wanted to have. We chose the Madras Poutine for starters [it was french fries with cheddar cheese, garlic and jalepenos]. It was quite good, and a large portion at that. Subsequently, for the mains, we chose pasta. Friend opted for her usual Aglio E Olio with Penne. I opted for another pasta in mushroom sauce. My friend requested the waiter to add some veggies to it for which he responded saying "it doesnt come with veggies, but shall get you some" and then few minutes later the dishes arrived at the table, sans veggies. The owner walked over asked us if we wanted veggies, proceeded to once again repeat what the staff had said earlier and we then said "No it is ok, we dont want veggies, we are ok".

After two bites, she nudged me and pointed out to the hair that was in her pasta. We looked around, couldnt find anyone, and so kept that aside and continued with the meal. We decided to skip dessert but were offered a Blondie by the owner esp since it was my Birthday... it was good, but too sweet [white chocolate]

The bill worked out to about 1600 Rs, which is not cheap... We left the place with mixed views and wondered if we would ever come back here.. Subsequently, I spoke to quite a few friends who had visited here and had similar views as us. Few others had also found hair in their food, service botchy and pricey.

Last evening, friend came over with her hubby and son and announced that I was not to cook and we will head out somewhere.. Some act of fate and they picked That Madras Place! We decided to put our 1st experience behind and give the place another shot! But sadly, it is probably my last visit here.

What happened you ask? Well after ordering Dynabites [ cheese jalepeno fried balls], for the main course, friend ordered the same Aglio E Olio for herself, Pasta Alfredo for her son. I ordered pumpkin ravioli( in lemon butter sauce) while my friend ordered chicken ravioli(in arabiata sauce).. Few mins later we were served our dishes. I took a bite of the ravioli and kinda knew it wasn't pumpkin and was most likely chicken(white chewy piece inside ravioli) & then Friend broke one ravioli to find pumpkin. We hailed a staff and after 10 mins we were served right dishes with an apology.. The man who was taking orders came over, smiled and said hopefully the meal is good and went away with that smile [marketing smile]

The final correct dish- Pumpkin Raviolli in lemon butter sauce

I dint raise a hoohaa though I was beyond pissed off. Wth! Serving the wrong dish is one thing, but a Vegetarian served a non-veg dish is just inexcusable according to me.. I could imagine few other friends would have reacted in such a situation.

Do I let this goof up slide? Yes, the final dish that came tasted good but my mood was off..  What would you do? The owner who was there, and am sure was aware of the goof up dint bother coming over to speak to us or apologise...

Oh well... I guess one customer less does not matter to them~!! Considering the place does get quite a crowd, I even overheard the guy in the next table say "we saw and read reviews on zomato and decided to come here for dinner"....

Sloppy Joes

Every year we drive about 2 hours away for our summer District Convention.  The kids love it as we stay in a hotel and after the convention each night they get to swim in the pool.  It's like a mini vacation each summer. Many people enjoy visiting the restaurants in the area.  Well, for a family of 5, that gets expensive.

I try to bring something for dinner for 2 of the 3 nights. I don't mind eating out once during the long weekend.

My sister in law posted this sloppy joe recipe on her blog, Celebration Generation.  I know that she and my brother frequent different kinds of conventions as well during the year. She called these sloppy joes, Convention Sloppy Joes.

These are perfect to make ahead at home and then bring them along.  Super quick to heat up on the stove or a crock pot once you're in the hotel.

I eat mine over a yam or a sweet potato.  The rest of the family ate theirs on buns.  Delicious and way cheaper and healthier than eating out.

I halved the batch but you can get a huge stock pot and double it to make a ton for a large group.

Sloppy Joes Recipe
1/2 lb mushrooms, chopped (we didn't use)
1 poblano pepper, seeded and chopped
2 jalapenos, chopped (seeded if you choose)
2 green bell peppers, seeded and chopped
1 red bell pepper, seeded and chopped
1 small red onion, peeled and chopped
1 yellow onion, peeled and chopped
3 stalks celery, chopped
3 carrots, peeled and grated
1 1/2 tsp salt
2 lbs ground beef
1 lb ground chorizo-type sausage
1 lb ground pork
4 cups tomato / spaghetti sauce of choice
6 cloves garlic, peeled and minced
2 tbsp. vinegar
1 tsp black pepper
2 tsp. steak spice
In a large pot  combine all of the vegetables and 1 1/2 tsp of salt. Cook over high heat, stirring often, until vegetables are soft and most of the water has come out of them – it will look soupy.
Once you set the vegetables to cook, combine all three meats in another large pan. Cook, stirring frequently and breaking up chunks until browned and cooked through.
Strain meats off of any fat and drippings, and add to vegetables. Stir well to combine.
Add tomato/spaghetti sauce, garlic, vinegar, pepper and steak spice to the pot, stir well to fully combine.
If you're serving this immediately, simmer until cooked down and there is a nice thick sauce.
If you are making this ahead of time, don't cook down and leave it kinda runny and soupy.  Cool a bit and put in freezer safe containers.
Taste mixture, adjust seasonings as desired. Feel free to add more vinegar if you want more of an acidic bite to it.

Avocado Chicken Salad Sandwich

More avocado you say?  Heck yea!  I haven't met a chicken salad that I haven't liked.  This one totally lived up to expectation!

I gave my husband one of these sandwiches for lunch.  He came home and said he was a bit scared of the green sandwich at first but loved it and asked for more.

I couldn't help but eat this with my delicious Garlic Aioli. That and some organic romaine lettuce and it was perfect.

I don't eat too many sandwiches as I haven't found a gluten free bread that I love.  This loaf was from a box, I don't remember what brand. I do know that I added some garlic powder and Italian seasoning to the bread and it turned out delicious!

Avocado Chicken Salad Recipe
Adapted from Family Fresh Meals

2 cups shredded chicken
1 avocado, chopped in chunks
1 tbsp. onion, minced
1/2 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. pepper
2 tsp. lime juice
2 tsp. cilantro
1/4 cup mayo, light
1/4 cup plain Greek yogurt

Mix all ingredients together and refrigerate. Serve with lettuce and Garlic Aioli if desired.  It's awesome, you totally should!

Apple Tuna Lettuce Wraps or Sandwiches

My husband eats sandwiches every day for lunch.  Usually lunch meat sandwiches with a different sauces to make them different.  All in all, there isn't much variety but for the occasional egg salad. Then I saw tuna on sale.

I had forgotten about tuna.

We used to eat it all the time. I was never a huge fan of it but I ate it anyways.  My husband though, loves it.

So we bought tuna.  He loves it and also loves that he has another choice for lunch now.

I told him this was kinda like a Waldorf salad but with tuna.  He loved it!  My daughter put hers on lettuce or a wrap.  That is totally the way to go.  Little tuna appetizers.

Apple Tuna Lettuce Wraps or Sandwiches Recipe

1/3 cup mayonnaise, I used light
1/3 cup celery, finely diced
1/3 cup chopped pecans or walnuts, chopped
3 tbsp. onion, chopped
1 1/2 tbsp. sweet pickle relish
1 tsp. sugar
2 cans tuna packed in water, drained
1/3 cup apple, chopped

Combine mayo, celery, nuts, onion, relish and sugar.  Stir in tuna and apple. Spread on toast with lettuce or scoop onto lettuce leaves.

Garlic Avocado Aioli - BLT Sandwich

I've mentioned my love for avocados. I also love dips.  In fact, dips can be quite dangerous sometimes around here. While this isn't the healthiest of dips, I did manage to use light mayo and sour cream which helped a bit.  I want to substitute greek yogurt for half of the mayo and sour cream and see how that works. I suspect it will be just fine and even healthier.
-

This garlic avocado aioli is fantastic. I couldn't stop eating it.  I loaded a bunch on some gluten free bread and made myself a BLT. So, so, so good!

Loved it with veggies and Garlic Fries as well.  You can't go wrong with this.

Garlic Aioli Recipe

1/2 cup mayonnaise, light
1/2 cup sour cream, light
1 avocado
3 garlic cloves
1/2 tsp. dried basil
2 tbsp. minced onion
1 tbsp. lemon juice
3 - 4 banana pepper rings, from a jar
Salt and pepper

Add all the ingredients to your food processor.  Puree until smooth.  Store in refrigerator.

California Pizza Kitchen

It was Saturday evening when a friend- Av popped in Whatsapp and announced that CPK was opening the subsequent Monday. For those who are unaware, CPK is California Pizza Kitchen. The two times I have been to Phoenix I noticed the huge banner with a “coming soon” on it. After our Bangalore trip, I learnt that CPK serves alcohol and so maybe they were waiting for license [just as HRC has been waiting]. But alas., they have given up or not pursued the same, for they are open in Phoenix Market City, Velachery.

So, coming back to the Saturday evening, this friend & I decided we will do Monday night dinner at CPK. Most others were tied up and we froze our plan. On Sunday evening, another friend announced she was at CPK and gave us feedback on the dishes and the place. Av who discovered they were opening on Monday was surprised they had opened on Sunday. But anyways, we stuck to our plan and Monday evening I was there in Phoenix around 7pm. Did some shopping at Big Bazaar and waited for Av to arrive.

The entry to CPK is from the outside. So, you can actually park, and walk all the way around the mall on the same side as Nandos and you will spot CPK right at the end. It is located near the children’s play area and near the dancing water fountain. There is also a huge monitor on top that was showcasing random sports events.

We walked in around 8 and the place was fairly empty. Chose a booth and made ourselves comfortable. The menu was brought and the waiter asked for our water preference and if we wanted a beverage. Av ordered Coke while I opted for the Strawberry Italian Soda [going against my usual fresh lime soda-salt] We also ordered the Lettuce Wrap. The drinks arrived within 2 minutes, followed closely by the starter. There was a plate with a few fresh lettuce leaves and another plate with peanut sauce and filling [it had paneer, seasonings, and sat on a bed of something that resembled friend rice noodles]. We had to place a few spoonfuls in the lettuce sheet, add some sauce, roll it up and chomp on it. I loved the flavours, and the crunchiness of the Lettuce was just perfect.

Spent a few minutes catching up on life and other things that dint matter, and Av shared her experience at CPK in the USA. Going with her recommendation, we ordered the Toastada Pizza [it is a hot & cold pizza, there is a thin crust base with black bean sauce on it, and above that is a healthy serving of shredded lettuce and tortilla chips] with a side of salsa that was divine. It arrived on the table and is possibly the ONLY healthy pizza i’ve ever had in my life.

The thin crust had a nice crisp texture and the hot & cold was perfect. Within minutes the plate was wiped clean and we were grinning. The only thing that kind of put us off a bit was the occasional bugs that found their way to the table- tiny mosquitoes [possibly because it was located near trees and water in the outdoor area]. Oh and it was a whole new experience having staff come over ask us how the drinks were, the starters and the main as well.

Since our friend had told us about the desserts, we opted for the White Chocolate Cheesecake. And it was delicious. With a healthy topping of grated white chocolate, the cheesecake was rich and perfect. Yes, it was different from others I’ve had but I liked this one.

Phew, what a fun evening it had been. We asked for the check, paid the bill and spent a good hour or two sitting on the bench outside yapping away to glory.

Price: This meal costed us Rs2100 [incl taxes]
Ambiance- Simple and elegant.
Service- Very good

Egg Salad Sandwiches

My favorite scene in Lilo & Stick is where Lilo declares that it is "sandwich day".  We've watched that so many times, we have the whole scene memorized.  In the movie, Thursday is sandwich day.  Around our house? Everyday is sandwich day.

We eat a lot of sandwiches.

I make 2 sandwiches every morning for my husband for lunch to eat at work. I've asked him if he wants a salad, a wrap or something hot to microwave.  Nope, he's good with sandwiches.

I do like to try to mix it up for him a bit. So about once a week I've been making egg salad. I make it different ways but I think that this is his favorite though.

But of course there is the dilemma over Miracle Whip over Mayonnaise. He swears by Miracle Whip but I am a mayo chick all the way.  He eats way more of it than I do so he usually wins.

How do you like your egg salad?

Egg Salad Sandwiches

6 large eggs, hard boiled, cooled and chopped
1/4 cup celery, chopped finely
1/4 cup red pepper, chopped finely
3 tbsp. mayo (or miracle whip if you must)
1/4 tsp. celery salt
1/8 tsp. pepper
Dash or two of paprika
Lettuce
Bread, optional

Mix the eggs, celery, red pepper and mayo together.  Add the celery salt, pepper and paprika.  Taste and adjust seasoning.  Make sandwiches with lettuce and enjoy.

Optional mix ins: Chives, sliced green onions, tomato, or cucumber. I've done all of these at different times and they are all good.

Shredded BBQ Ribs Grilled Cheddar Sandwich

I love leftovers. I love making extra for dinner just so I can have leftovers.  It means less cooking for me and having fun creating new meals with the leftovers.

Remember that BBQ pork in the slow cooker?  Shred up those ribs and you have the makings for an awesome grilled cheese sandwich.

If you haven't made that Chipote Butter yet, now would be a good time.  Regular butter certainly will work fine but the Chipotle Butter brings this sandwich to another level, I promise you.

Shred up a bunch of cheddar cheese. Cheese is good.

Lay the bread slices on the hot pan, load up with shredded cheese, shredded meat and then more cheese.

The smell at this point will start to drive you crazy.

I think my eyes rolled back in my head a little bit after I took a bite of this.  Such a good ooey gooey sandwich.  Who said leftovers had to be boring?

There was even enough leftover for another day of sandwiches.  This one we made on a hoagie bun with pepperjack cheese.

Shredded BBQ Ribs Grilled Cheddar Sandwich Recipe

2 slices of bread
1/2 cup leftover BBQ shredded pork (or any shredded meat)
1/2 cup cheddar cheese, shredded or slices
2 tbsp. butter, Chipotle Butter if you have it

Spread both pieces of bread with the butter.  Lay one slice butter side down on a hot skillet. Top with half the cheese, then shredded pork, then the other half of the cheese.  Top with other bread slice, butter side up. Cover and cook for about 2 - 3 minutes until bread it browned.  Carefully flip sandwich over with spatula and continue cooking the other side for about 2 - 3 minutes until browned and cheese is melted.

Turkey Lettuce Wraps - 17 Day Diet - Day 10

We tend to eat a lot of sandwiches around here.  I've made sandwiches with gluten free bread but find that they aren't the greatest.  This month I'm avoiding bread altogether.  While I've made lettuce wraps before, I'm finding I'm using them a great deal more without bread or tortillas.  My daughter LOVES these.  She said, "These taste just like sandwiches!".  Righto chicky, they do!
Be careful when choosing turkey. Many of the sliced turkeys are super high in sodium.  Find one that is low sodium and you'll be much better off.

Day 10 - 17 Day Diet Menu Plan

Egg Whites with Salsa
Yogurt
Apple
Stir Fry Chicken & Veggies
Yogurt

Turkey Lettuce Wraps

Sliced turkey, 4 oz.
Tomato, chopped
Cucumbers, chopped
Green onions, sliced
Lettuce leaves

Carefully remove the outer leaves of lettuce from the head of lettuce.  Place turkey, cucumbers, tomato and a few snips of green onions on lettuce leaves.  Enjoy

Feel free to add a bit of light ranch dressing but we enjoyed these just as they were.

Triple Onion Burgers

I could eat caramelized onions on just about anything. I'm surprised I don't make them more often just to throw on random food.  They stay in the refrigerator and heat up well.  I might just have to whip up another batch of them. Although, we go through so many onions as it is.  I buy them in bulk at Costco and it is strangely alarming how fast we go through them.

So of course it was my love of onions that drew me to this burger recipe of course.  I even thought to make an onion dip to top it with.

Instead I served it with this awesome ranch potato salad. If there is anything that I love more than onions, it's ranch.  It too, goes with just about anything.  The onion burger and the ranch potato salad make for an awesome meal!

Triple Onion Burger Recipe

2 lbs. ground turkey
1/2 cup red onion, finely chopped
1/3 cup green onions, sliced
3/4 tsp. salt
1/2 tsp. pepper
4 cloves garlic, minced

Caramelized onions
2 onions, sliced
1 tbsp. butter
1 tbsp. oil
Salt and pepper
1/2 tsp. sugar
3 tbsp. balsamic vinegar

In a bowl, combine ground turkey, red onion, green onions, salt, pepper and garlic, mix well.  Shape into 6 patties.  Cook in pan or grill until done.

Caramelized onions:
Melt butter in a pan, add oil and onions.  Stir, cover and cook for about 5 minutes.  Uncover, stir in salt, pepper and sugar.  Heat about 10 more minutes or until onions are golden brown, stirring occasionally.  Add vinegar, stir and serve.
