Banana Oatmeal Bake




I almost love when I have overripe bananas.  It doesn't happen too often.  I buy a lot of bananas but they get eaten. Fast.  So when they start to get overripe, I jump at the chance to make something with bananas.  This time?  This awesome banana baked oatmeal.

I would have loved to use walnuts or pecans but all I had was almonds.  It was delicious and I especially loved it with a bit of vanilla yogurt.  My only thought was that it needed a bit of cinnamon. 




Banana Oatmeal Bake Recipe
Adapted from Recipe Rhapsody

2 cups old fashioned oats
1/4 cup Bob's Red Mill 5 grain cereal
2 tbsp. wheat germ
2 tbsp. ground flaxseed
1 tsp. baking powder
1/4 tsp. salt
1/4 cup honey
1 1/2 cup milk, 1%
2 medium bananas, mashed
1 large egg, lightly beaten
1 tsp. vanilla extract
1 oz. almonds (or walnuts or pecans)

Combine oats, cereal, wheat germ, flaxseed, baking powder and salt.  Set aside.  In another bowl, combine honey, milk, egg, vanilla extract and bananas.  Combine the wet with the dry ingredients.  Lightly spray an 8 x 8 in. pan with cooking spray and pour in banana oats mixture.  Bake at 375 degrees for 20 minutes.  Add nuts to the top and bake for another 5 minutes to toast them.  Serve warm.

Total calories = 1392 calories
6 servings = 232 calories per serving
