I've made pumpkin cheesecake before. But this is pumpkin cheesecake cake.
It is a pumpkin cake with a layer of pumpkin cheesecake layered in the middle. Oh yea, the best of both world. Cake and cheesecake.
My son has been loving pumpkin this year and I'm quite sure that he ate half of this cake. Clearly it was a winner with him and will be made again. :-)
Pumpkin Cheesecake Cake Recipe
Cake Ingredients:
2 sticks of butter
3 eggs
2 1/2 cups flour
1 cup granulated sugar
1/2 cup pumpkin
1/2 cup sour cream
1 tsp. vanilla
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
Filling Ingredients:
8 oz. cream cheese
1/3 cup granulated sugar
1 egg
1/4 cup canned pumpkin
1 tbsp. corn starch
1/2 tsp. vanilla
Filling preparation:
Beat all ingredients until very smooth. Set aside and prepare cake batter.
For the Cake:
Preheat oven to 350. In a large bowl, cream butter, sugar and vanilla until light and fluffy. Add eggs and beat well.
Add flour, baking powder, baking soda, cinnamon and salt. Mix in pumpkin and sour cream. Blend thoroughly until smooth.
Pour 1/2 of the batter into a buttered 9 x 13 in. glass baking dish. Add the filling mix, trying to spread evenly over the top. Add the remaining cake batter on top and lightly swirl into filling. Just spread on top the best you can. Bake for 50 - 55 minutes until set. Allow to cool.
