White Bean Italian Pizza




I got excited when I saw this recipe.  White beans on pizza as a sauce.  Oh my.


The original recipe called for 1/2 can of beans, I used the whole can.  It didn't seem like too much and we loved it.


Use whatever pizza crust you are used to.  The recipe below is the one that I typically use.  Just spread it around as thin as you can get it as it puffs up when you bake it.  I always prebake it too so it gets a bit crispier. 


You can use whatever topping you'd like too.  I kept this veggie.  Hubs of course said, "Where's the chicken?" 

It's okay, he'll be alright. 


Look at all those lovely toppings and melty cheese.  Making me hungry just looking at it again. 



White Bean Italian Pizza

I now use gluten free pizza crust but if you aren't gluten free, here is a good one.

1 recipe, no-rise pizza crust:

No rise wheat crust:

1 cup all purpose flour
1 cup whole wheat flour
1 tbsp. honey
1 packet of yeast or 2 1/4 tsp. yeast
1 tsp. salt
1 cup very warm water

Mix the warm water and yeast and let sit for a couple of minutes.  Add the flour and salt and mix. Add more flour until it isn't gooey sticky and is easy to spread or roll.  Spray a large baking sheet with cooking spray and spread your crust on it.  Prebake for about 5 - 7 minutes at 400.



White Bean Pizza:
1 (14oz) can white beans (like Great White Northern), rinsed and drained
4 garlic cloves, minced
1/2 - 1 T milk
2 tsp. Italian seasoning

1 C fresh spinach, cleaned and trimmed
1/2 red bell pepper, diced
1/2 red onion, sliced
4 oz fresh mushrooms, sliced (optional, we didn't use)
1 1/2 C shredded cheeses (we used Colby and mozzarella)

Prepare pizza crust according to directions in the pizza crust recipe.

Combine the beans, garlic cloves and milk in a blender. Puree until beans are smooth. Mix in 1 tsp. of Italian seasoning.


Spread the white bean sauce in a thin layer over prepared pizza crust.
Top with toppings. We used spinach, red pepper and red onions. Top with cheese.


Sprinkle with remaining 1 tsp. of Italian seasoning. And, if desired, a twist of freshly ground sea salt and pepper.


Bake at 450 for 15-20 minutes, until cheese is bubbly and browned.
1/4 pizza = 565 calories
