Mexican Meatloaf



I got the idea for this on Chaya's blog.  She said that it was "based on mexican cooking without the beans".  Well, I threw in a can of beans.

I was a little afraid that it wouldn't hold together but it came our alright.  It crumbled a bit as eating it but not bad. 



I LOVED the cornmeal added to this.  I was surprised on how tasty and how much the corn flavor came through.  We loved this and I'll totally make it again. 

This makes a great freezer meal too. I actually made 3 meatloafs at once and froze them all for future meals.  Another tip is when you make this, just make two, one for now and one for later.

We ate this with an awesome Southwestern Cheesy Pasta. Recipe coming soon!



Mexican Meat Loaf Recipe
Adapted from Chaya's Comfy Cook Blog


1 lb. ground turkey, lean 93%
1/2 cup bread crumbs (I used gluten free)
1/2 cup cornmeal
1/4 cup chili sauce
1/4 cup cilantro, chopped
2 large eggs
1 onion, chopped
1 1/2 peppers, I used one orange and 1/2 red pepper
2 jalapeno peppers, chopped
2 cups corn, frozen
1 can black beans, drained and rinsed

In a large bowl, combine ground turkey, bread crumbs, corn meal, chili sauce, cilantro and eggs.  Mix well.  Spray a pan with cooking spray and cook onion for a few minutes.  Add peppers and jalapenos and saute for a few more minutes.  Let cool a bit.  Add onion mixture to the beef mixture and combine.  Add beans and corn and stir until combined.  Place mixture into loaf pan coated with cooking spray.  Bake for about an hour at 350 until done. 

Total calories = 2126 calories
8 servings = 266 calories per serving

Mojito Recipe | Mojito Ingredients

During the hot months of summer is always a pleasure to have a refreshing snow cone syrup Torani. Zucchini & Butternut Squash Cheesy Casserole



This started out to be something else.  It was supposed to have rice in it. Then I discovered I didn't have rice.  So I threw in a butternut squash. Obvious choice, don't you think?


It turned out perfect! A great side dish packed with veggies and cheese!  It didn't need the rice at all.



Zucchini & Squash Casserole Recipe

1 lb. butternut squash, peeled and cut
1 1/2 pounds zucchini, cubed

1 cup onions, diced
1 clove garlic, minced
1 1/4 teaspoons garlic salt
1/2 teaspoon basil
1/2 teaspoon sweet paprika
1/2 teaspoon dried oregano
1 1/2 cups seeded, chopped tomatoes
Cheddar cheese, sharp (4 oz) divided

1.Cook squash in a large nonstick pan with about 1/4 cup of water for about 10 minutes or until almost done, but still firm. 

2. Add onions and cook for another 3 - 4 minutes.
3. Add zucchini, garlic, spices and tomatoes and mix to combine.   Transfer to a casserole dish sprayed with cooking spray. Top with cheese.
4.Bake uncovered 20 minutes, or until cheese is melted and bubbly.
Total calories = 925 calories
6 servings = 154 calories

The Hardest Working Pets in Town

Would you define earthworms as pets?  It is probably a stretch to do so, yet I am very fond of the earthworms in my two worm farms.

The worm farms take all our 'green' food waste, including vegetable and fruit scraps, tea bags and leaves and coffee grounds, and turn them into beautiful, dark worm castings and worm 'juice' that, when diluted, makes a fantastic liquid fertiliser.

I have two commercial worm farms, a rectangular one and a round one.  I have had them for at least the past decade and they continue to work beautifully.  About once a week I add a handful of lime to neutralise the acidity of food scraps, but that's about the only maintenance the farms require.

I once killed off my entire worm population during one of Adelaide's severe heatwaves, so I now bring the worm farms into the laundry if I think we are going to have a run of extremely hot days.  The composting worms are quite expensive to buy, so killing them off is not a good idea.

I love my worms so much that when we moved to Adelaide I brought tub of my Melbourne worms in the car.

My goal for next summer is to produce all the garden fertiliser I need on site.  I hope to use a combination of compost, chook poo and of course, the wonderful castings produced by my composting worms.

A lot of things for the oven as well.  I don't think it will be too warm of a week but if it does heat up, I might make some changes so the oven isn't on as much.  There were a few things I didn't get to last week that I carried over to this week.  So many new recipes, so little time...

Salted Brown Butter Crispy Treats



We have a marshmallow cupboard.  Well, it's not exclusively devoted to marshmallows but we call it the marshmallow cupboard.

I seem to have a knack for collecting marshmallows and there always seems to be like 5 bags of marshmallows in there at any given time. 

Truth be told, I don't even LIKE marshmallows.



So clearly it was time to use the marshmallows.

Did you know the bible has the word marshmallow in it?  Job 6:6.



So with marshmallows and a box of Rice Crispies in hand, I went searching the internet for a rice crispy treats. I wanted to find one with a twist to it. 

These were perfect.  Not too radical but it certainly elevated them up a notch or two. Browned butter seriously rocks!

The chocolate clump was my kids trying to decorate an already super sweet delicious bar with more sugar. 



Salted Brown Butter Crispy Treats Recipe
Recipe from Smitten Kitchen


4 ounces (1/4 pound or 1 stick) unsalted butter
1 10-ounce bag marshmallows
Heaping 1/4 teaspoon coarse sea salt
6 cups Rice Krispies cereal (about half a 12-ounce box)


Butter (or coat with non-stick spray) an 8-inch square cake pan with 2-inch sides.


In a large pot, melt butter over medium-low heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty. Stir frequently, scraping up any bits from the bottom as you do. Don’t take your eyes off the pot as while you may be impatient for it to start browning, the period between the time the butter begins to take on color and the point where it burns is often less than a minute.


As soon as the butter takes on a nutty color, turn the heat off and stir in the marshmallows. The residual heat from the melted butter should be enough to melt them, but if it is not, turn it back on low until the marshmallows are smooth.


Remove the pot from the stove and stir in the salt and cereal together. Quickly spread into prepared pan.

Salted Brown Butter Peanut Butter Crispy Treats

Same as above, just add 1/2 - 3/4 cup of peanut butter with the marshmallows until melted.  Drizzle with chocolate if desired.  I let the kids drizzle with chocolate and use sprinkles.

Let's start with the meat we eat. The top 4 companies control 80% of beef and pork we eat. Tyson is the largest meat company in the world! They have control over most of the meat we eat. What this means is our decision to purchase products from them encourages them to produce as much meat as possible economically as possible to increase your income.

Chicken farm facts:

• Due to its contracts with Tyson and other companies that just a farmer allowed the filmmakers to get his chicken coop.

• The chicken house discussed in the film has windows and fresh air moving through it every day - Tyson does not allow farmers to raise chickens in houses with windows. Most chickens never see daylight

• The chicken house that was discussed was full of chickens. Each day the farmer walked by the house to dispose of dead chickens.

• 1 farmer has about 300,000 chickens

· We grow chickens in 48 days - in nature it takes 2 or 3 times as long!

• Due to rapid growth and steroids to increase muscle tissue - bones of chicken can not bear the weight of the chicken and many of them are stationary.

Fast Food Nation | Fast Food Nation Notes

Ever have those days when you search in vain for dinner? I have those days all the time. Not sure if it's because I cook for a living, or is it because I've eaten. I miss those times when the decision was made for you. Maybe that's the problem? I have problems with decision making. My husband and I never seem to agree on what to eat. I feed people all day, and there is never a gray area of ​​what I'm doing, as soon as it happened to my mom and women dress, all his skill to make a decision flies out the window.

This refers to the poison of Food Network, the network indirectly responsible for almost everything that ails us. If you accepted a few weeks ago, expecting to gain weight this season - regardless - you're probably right. Man, you've got cable.

If you are not eating organic as much as possible, you're in trouble. In the eighties, the buzz was just starting over genetically modified foods, (the new Food Network), and if we know the difference. Fast forward to today, almost every product in every store has some kind of "change" as if nature needs improvement. Are not bananas only the perfect fruit, complete with its own case for transport? I needed to "fit"? All for profit.

The problem is that nobody knows the effect of all this manipulation. I can see a clear, everyone seems to be fat. It is very easy. Maize, which has become a main ingredient in damn near everything has been modified to contain as much sugar and starch, which can hardly eat. Corn on the cob tastes like dust. Food Network venom produces islands and islets of empty calories in your local market.

Many people think that the McDonald brothers of California started the fast food craze in America, but in reality, was the White Castle hamburger chain that actually started fast food history in America. J. Walter Anderson opened the first White Castle in 1916 in Wichita, Kansas, and people liked the cheap hamburgers, fries and cola offered. They wanted their restaurant more efficient and profitable, so he devised a simple menu in a small building without any tables, so people took their food and ate in their cars. In 1953, the brothers had decided to franchise his idea, and two franchises opened in Downey, California and Phoenix, Arizona.

Getting Out of the Car Habit



Ever since I started travelling to work by bicycle I have been driving my car a lot less.  It's not just the work trips: I'm less inclined to drive my car anywhere.

For example, on Thursday I rode my bike to work and back home again.  I work a short day each Thursday so I was home by about 2 o'clock.  I then realised that I needed to put a cheque in the bank, and even though rain was threatening, instead of taking the car I walked to the bank.  

I didn't really think about it at the time, but after I came back home I realised that in the past I wouldn't even have considered walking to the bank.  I can't believe how many short trips I have driven in my life, when I could easily have walked.

The advantages of riding a bicycle or walking short trips instead of driving are enormous.  You become much more aware of the world around you.  You can smile and say g'day to others who are out and about.  Your level of fitness will improve.  And of course, you'll save petrol, which is good for your bank balance.

Of course, I still drive sometimes.  For instance, I haven't worked out how to manage a weekly grocery shop for six people on my bicycle yet, although I know if I had to I could do multiple trips on the bike.  I am wary of cycling at night as it doesn't feel safe, even with flashing lights on the bike.  And kids' sporting events are often too far away, and travelled via really busy roads, to make them safe for this nervous bike-riding mother and her children.

However, I often arrive at the weekend to discover that I haven't use the car since the previous weekend.  I am saving money and getting fitter in the process.  And it feels so easy.

Sloppy Maple BBQ Turkey Joes



There is just something about a sloppy joe.  I've made many kinds of sloppy joes and there just doesn't seem to be one that doesn't just ring out as pure comfort food. 

These guys were sweet.  I happen to like sweet food, so for me, these were awesome. 

So what's your favorite sloppy joe recipe?




Sloppy Maple BBQ Turkey Joes Recipe
Adapted from Rachael Ray

2 lbs. ground turkey, 93% lean
1 tbsp. poultry seasoning
Salt and pepper
1 red pepper, chopped
1 large onion, chopped
1 tbsp. garlic, minced
1 can tomato sauce, 15 oz.
1/4 cup + 2 tbsp. pure maple syrup
1/4 cup soy sauce
3 tbsp. cider vinegar
3 tbsp. splenda (or brown sugar)
1 slightly heaping tbsp. dijon mustard

In a large skillet, brown ground turkey and season with salt, pepper and poultry seasoning.  Cook until browned and stir in the pepper, onion and garlic and cook until the veggies are tender.  In a bowl, stir together the rest of the ingredients and pour into turkey mixture.  Simmer for a few minutes to combine flavors.  Serve on buns.  I used 100 calorie Arnold selects sandwich thins.

Total calories = 1980 calories
12 - 1/2 cup servings = 165 calories per serving
265 calories per sandwich with a 100 calorie sandwich thin

Bean & Pineapple Soft Tacos



Quick, easy, tasty meal coming at you right here.  These rocked!  I rolled up mine like a burrito on a corn tortilla, hubs and the brother ate theirs on taco shells.  Whatever you want to call it, it was awesome and I'll be for sure making them again!



Bean & Pineapple Soft Tacos

1 can (15 oz) black beans, rinsed and drained
1 large onion, chopped
1 red pepper, chopped
1 can (20 oz) pineapple tidbits, drained
1 jar (16 oz) salsa
1 can (4 oz) chopped green chiles
1/4 cup minced fresh cilantro
100 calories Whole wheat tortillas
Optional toppings: lettuce, tomatoes, sour cream, cheese, avocado

In a large pan, saute onion and red pepper in cooking spray until tender.  Add the pineapple, salsa, chilies, beans and heat through.  Stir in cilantro.  Place 1/2 cup filling on one tortilla. Add toppings as desired.

Total calories for filling = 820 calories
14 servings = 159 calories per taco with a 100 calories whole wheat tortilla

Condiments:

1 / 2 tablespoons. of Jamaica pepper
4 tsp. salt

Boil the meat in a large pot with the seasonings. The water should be sufficient to cover the meat. Bring to boil and simmer for two hours or until tender. Cool in liquid. Cut into pieces one by one inch. Leave some fat on pork but not beef. Line loaf pan with muslin, which is large enough to completely cover the top of the meat when folded. Divide the meat and juice in the kitchen (there should be enough juice to just cover the meat), cover the top with muslin. Place heavy weight on top of the press and compact the meat loaf recipe flame Presulta.

This should be done several days before serving.

Place bread in a bowl and soak with water. The water should just cover the pan and leave for about 5 minutes, then drain excess water and squeeze bread to remove all liquid. Heat oil in a pan of olive, add the onion and half the garlic and stir occasionally while cooking over medium heat gently. Add the tomatoes, plus juice, basil leaves, tomato puree and sugar and then season with salt and pepper.
