Parmesan Chicken Bake

 
We eat a lot of chicken here. Sometimes I think that I've done pretty much everything with chicken. I've seen this same recipe, slathered with mayo. I love the thought of using greek yogurt instead of mayo.  So many less calories and so much less fat.
 

 
 
 The pictures are not very appealing.  I realize that.  But trust me, it tasted delicious and we all loved it.




Parmesan Chicken Bake
Adapted from Finding Joy in my Kitchen

2 1/2 lbs. chicken breasts, I used tenderloins
1 cup plain, greek yogurt
2 tbsp. dried minced onion
1 tsp. dried minced garlic
pinch of turmeric
1/4 tsp. paprika
1/4 tsp. salt
1/4 tsp. pepper
1/2 cup parmesan cheese

Arrange chicken flat in a 9 x 13 in. pan.  Mix together yogurt, minced onion, garlic and spices.  Stir well. Mix in 2 tbsp. of the parmesan cheese

Spread the yogurt mixture over the chicken breasts.  Sprinkle the rest of the parmesan cheese over the chicken breasts.

Bake for 45 - 50 minutes, uncovered

When chicken is browned and internal temperature reasches 180 degrees, the chicken is done.

Jalapeno Corn Fritters with Sweet Pepper Pineapple Salsa



 
 Small, fried, finger food.  Gluten free and delicious too? What's not to love? 
 
I had a blast visiting Mariel and Mary Anne's blog Feast on the Cheap. They have amazing recipes and fantastic pictures of their recipes.  I chose several to make but decided on the Jalapeno Corn Fritters to showcase this month. 
 
The recipe called for Old Bay seasoning.  I didn't have this but I have a whole cupboard full of spices so I set out to make my own. I looked online and there were several versions of Old Bay recipes.  I sorta mixed a couple and made my own. It seemed to turn out pretty good. 
 
 
 I wasn't sure what the texture the corn mixture was supposed to be.  It wasn't thick enough to make a patty but putting heaping tablespoon into the hot oil worked perfectly.
 
 
 
After my bacon grease accident last month, I quickly decided that my husband would help me make these. After this first batch, I handed him over the batter and he did a great job making them.
  
 
 
These turned out beautiful and were very quick to put together.  The pineapple salsa was such a good addition to the Corn Fritters.  The sweet and the freshness were a perfect match.  I really couldn't stop eating these and ate way too many.
 
 
 
I'm so glad that The Secret Recipe Club introduced me to Feast on the Cheap.  I know I will be back visiting often! 
 
 
 
 
Jalapeno Corn Fritters with Sweet Pepper Pineapple Relish Recipe
Adapted form Feast on the Cheap
 
Sweet Pepper Pineapple Salsa
1/4 cup sweet onion, diced
1 20 oz. can pineapple, diced
1 small red pepper, or 1/2 large, diced
Juice of 1 lime
1/2 tsp. salt
2 tsp. honey
 
Combine everything and store in refrigerator until ready to use.
 
Corn Fritters
 
1 jalapeno, seeded
2 cans of corn or about 4 cups of frozen corn, divided
1 egg
1/2 cup milk
1/2 cup cornmeal
2 tsp. Old Bay Seasoning OR use spice recipe below
1 tsp. minced garlic
1/3 cup flour, I used gluten free
Salt and pepper to taste
Canola oil
 
In a food processor or blender, combine 2 cups of corn kernels and jalapeno, process until quite smooth, about a minute. 
 
In a large bowl, whisk together egg and milk until smooth and stir in cornmeal, flour, garlic, Old Bay (or seasoning recipe below), salt and pepper.  Mix in remaining whole corn kernels and pureed corn. 
 
Pour about 1/2 inch oil in a deep skillet and heat oil until very hot. Using a spoon, scoop corn batter by tablespoons into hot oil. Fry until golden brown on both sides, it only takes about 2 minutes per side tops. Transfer to plate with paper towels on it and serve topped with Sweet Pepper Pineapple Salsa.
 
Old Bay Seasoning (copycat)
 
2 tsp. celery salt
1/4 tsp. paprika
1/8 tsp. black pepper
1/8 tsp. cayenne pepper
1 pinch EACH of dried mustard, nutmeg, cinnamon, allspice and ginger

Midnight Buffet at Main Street, Residency Towers, Chennai

There is nothing like being out with friends Friday night, go pubbing [pub hopping] or maybe catch a late evening show. But then, by the time you are out, it is nearly 11 and there are very options to grab a bite from. Well, Main Street in Residency Towers brings to you the Midnight Buffet. Yes, the doors open around 11.30 and it goes on till 4am. You read it right. It is the ideal place to head over to satiate your hunger pangs. Someone might want dosa, while another might want to dig into a big plate of Biryani while one might long for some pasta or salad. Well, whatever be your craving, you will find a dish here.





You walk into Residency Towers lobby; look no further, on your right is where you will find the entry into Main Street. The place has been done up to resemble the streets of Europe/UK. There are lamp posts, signage with names of Streets, a poster that says “Doner Kebab’, and even a small TV in the far end of the room. We sat near the far end where there was an ad for Marlborough with the Marlborough man looking straight at us.

The buffet counter is spread just outside the kitchen, so you can actually watch the Chef making a dosa or the tandoor dishes. The buffet starts with a soup, followed by a wide variety of salads, and then the main courses, and not to forget desserts.

You can pick from mushroom salad, pasta salad, green salad or head straight to the main course- a roti or Biryani [veg/non veg] with a dal makhani or maybe the roasted aloo and a dollop of raita. There is also freshly steamed idlis amidst the buffet. Dosas are served on order. These come with 3 varieties of chutney and sambar. The spread goes on, and for those who need comfort food, there is curd rice as well. If you still have space in your tummy, head across to the dessert counter and have a spoon of ice cream or sample one of the many pastries/puddings on display.








What surprised me was that the place was nearly half full. While chatting with the manager, I came to know that they do about 70covers every night, crowd starts coming in around 2-3am. Who would have thought Chennai had such a happening night life!!

But remember, this Buffet is available only on Friday & Saturday nights. You can even glimpse through the buffet menu before stepping in. And it is priced at Rs555 nett

Falafel Patties with Cucumber Sauce


 
My friends and I get together for dinner every month or so.  We like trying different restaurants and this month we decided to go Greek!  I'm not overly familiar with Greek food so I was game.  My first thought was falafel. I love falafel and figured I'd be ordering it off the menu.  As I was perusing the online menu, I discovered no falafel to be found at all.  I did some research and found that falafel isn't Greek at all. It's actually middle eastern food.  Who knew?  Clearly not me.
 
I did still find the Greek experience to be quite tasty and fun.  However, my craving for falafel hadn't been met.  We then went to a restaurant that had Gyros and I ordered the falafel pita.  It was very good but I ended up eating the entire pita bread.  I try to avoid eating bread as it doesn't agree with me.   
 
 
I knew I had to make my own. I had made it several times before but just never got around to posting it.  So I gathered all my ingredients and made falafel.  My mouth was watering already.  I was almost done with the falafel part when I stopped to make the cucumber yogurt sauce. Much to my dismay, I found that my cucumbers were slimy and not good.  Ugh, what is falafel without the cucumber sauce!  I was without a vehicle to buy cucumbers so I put the falafel in the refrigerator for the next night.  Sigh. My falafel would have to wait.

The next day I got some cukes and made my dressing. I finally had falafel, it was good and totally worth the wait.  I ate mine on a salad with lots of cucumber sauce.  My brother ate his on a tortilla.  Yes, I know that might be a conflict of food interest but I didn't buy pitas and he we eat everything on tortillas. Don't judge. :-) 



Falafel Patties with Cucumber Yogurt Sauce Recipe

2 (15 oz.) cans chickpeas, drained and rinsed
1 onion, chopped
1/2 cup parsley
4 cloves of garlic, chopped
2 eggs
1 tbsp. cumin
2 tsp. coriander
2 tsp. salt
1/4 tsp. pepper
couple of pinches of cayenne pepper
2 tsp. lemon juice
2 tsp. baking powder
2 tbsp. olive oil
2 cups bread crumbs, I used gluten free
oil or cooking spray for frying

Cucumber sauce
1 cup plain yogurt
1/2 cucumber, peeled and finely chopped
1/2 tsp. dill weed (or to taste)
Salt and pepper to taste
1 tbsp. mayonnaise

In a large bowl, mash chickpeas until thick and pasty.  Don't use the food processor, the texture will be too thin.  In a blender or food processor, process onion, parsley and garlic until smooth.  Stir into mashed chickpeas.

In a small bowl, combine egg, cumin, coriander, salt, pepper, cayenne, lemon juice and baking powder.  Stir into chickpea mixture with the olive oil.  Add the breadcrumbs until mixture is not sticky but will hold together, add more or less as needed. Form small balls and then flatten into patties. 

Heat oil or cooking spray in a large pan.  Fry patties until brown on both sides. You can also bake these in the oven at 425 for about 30 minutes, flipping half way.

In a small bowl, combine yogurt, cucumber, dill, salt, pepper and mayo.  Chill for at least 30 minutes.

Royal feast at Rajdhani, Phoenix Market City, Chennai



The question "Recommend a pure vegetarian[north indian] restaurant in chennai" would have only one answer if someone were to ask me. NO,  it is not Kailash Parbat or Cream Center, the only name to come out of my mouth would be "Rajdhani". Yes, the restaurant has not only impressed me, but also my family and many others, some of who happen to be staunch non vegetarians. That is how good they are! 

The 1st time I visited Rajdhani was the day they launched in Express Avenue. I had gone for a movie with friends and we hopped across to the food court and decided to have dinner here. One warning I must throw out is "make sure you are really hungry and your stomach is really empty" when visiting Rajdhani. The food here is that amazing and you will want to try out each of the dishes, which means you will be bursting in your seams if you stuff yourself. Food served here is pure veg, made with Ghee and the finest of spices and ingredients, and light on the masalas. 



Thanks to an ex-colleague and the bit of travel I have done, the cuisine is not new. But some of the dishes are equisite and delicious that you will go for a 2nd or even a 3rd helping. So, there I was, back in Rajdhani, this time in their 3rd outlet, the newest one, in Phoenix Market City. 





We were greeted in the traditional way, with a tikka and a welcome drink made with raw mango. And then, as you can guess was the feast. Spent a few minutes speaking to the Marketing head and team who'd flown down from Mumbai, heard the Hemji maharaj [head chef] explain each of the items on the menu [he apparently takes care of the South and shuttles between cities]. We also got a quick tour of the kitchen. While many of us assumed they had a central kitchen, we were told it was not so, each kitchen made the dishes every day. The only dish that was not cooked in the kitchens, and that came from Mumbai, specially for summer was Aam Ras. 

A new dish they have introduced is the Khoya roti, thick and yumm it felt it had been soaked in ghee and cooked with love. My favorite was the Daal bhati choorma, mango khadi, kichdi [ofcourse], khoya roti, pineapple kesari and jalebi. The meal has "I dont know how many" [72] items and is priced at Rs420/-. It is a meal that leaves you feeling like you are a King or Queen. Go ahead. Indulge!! And if you love mangos, this is the time to visit, they have included a few mango based dishes which are lip smacking

Summer Lunch at Sandy's

One of those days when impromptu plans were made and I met a friend of mine for lunch. Neither of us were really hungry, it was proving to be a long day and added it was the sweltering summer sun. After a few messages we decided to meet at Sandy's, wallace garden. Walked in, found a table for 2 near the counter and began catching up. We ordered drinks, she a ginger ale and I went for a Lychee fizz. Hers arrived in a can, while mine was served in a beaker with a pink straw. For someone who hates the sight of pink colour, i enjoyed every sip of this drink, maybe 'cos i love lychee.


For lunch, we chose light food- I ordered for the Tabouleh salad while she chose the Falafel wrap. The place was empty when we walked in, but within minutes it was packed. There were groups of 2-6 filling the tables. A family of 4 arrived, with a little boy and a girl who insisted on sitting in the center, on the bar stool type seating. They had to be helped up by their parents and animatedly began pointing to things on the shelf and talking.




And there came our food. Mine looked green and inviting, hers neatly wrapped up in butter paper served alongside a cucumber dip and potato wedges. My salad was fresh, rich and filled with flavour, loved it.

We skipped dessert and headed home. Now that is what i call Lunch- light and yet refreshing. Sandy's never fails to please.. :-))

If you are wondering where to go for a quick lunch or some yumm desserts, this is whre you should go. They have quite a variety of food and desserts that will leave you licking the plate clean.. Not only is the food good, but service is also top notch. The staff leave you alone, without constantly coming over asking if you need anything or if all is good....

Broccoli Cheese Rice Casserole

 
I've been a lazy cook recently.  I've been making more of the "throw a bunch of stuff in a pan and call it dinner" kind of mood.  I haven't really been in mood to create new recipe and have been sticking with some old stand by recipes.  This is a great recipe that comes together quickly and is quite versatile. I've made it several times and it's never really the same every time.
 
I love putting a zucchini in this but found that my last zucchini was not good.  Very disappointing.  So I threw a red pepper in there instead. I liked it and will probably use both next time I make it.
 
You can get creative with the cheeses as well. Cheddar and Parmesan combo is probably my favorite but I always have Colby jack in the fridge so that gets used often too.
 
 

This is an especially easy meal if you have leftover rice in the refrigerator.  When I make rice, I always make a big batch and somehow it always seems to get used.  This time I only had about 2 cups of cooked rice rather than 3 cups. I thought about making more but you know, that lazy thing kicked in and I decided that 2 cups would do. 
 
What are some of your favorite lazy meals to make?


Broccoli Cheese Rice Casserole

2 tbsp. butter
1 medium onion, chopped
2 tbsp. garlic, minced
1/4 cup flour (I used gluten free)
2 cups milk
1 tsp. Dijon mustard
1/2 tsp. salt and pepper
8 oz. cheddar cheese, shredded (or whatever kind you have)
1/3 cup fresh Parmesan cheese, shredded
3 cups cooked rice, I used brown
3 cups cooked broccoli florets
1 small red pepper, chopped
1 small zucchini, cut in rounds and halved

Spray a 9 x 13 in. casserole pan.    In a large saucepan, melt the butter over low heat, add onion and saute for about 5 minutes.  Add garlic and saute for about a minute.  Whisk in flour and cook 3 - 4 minutes, whisking constantly.  Slowly stir in milk, mustard and season with salt and pepper, bring to a simmer for about 4 minutes, stirring occasionally.  Add most of the cheddar cheese (saving about 1/3 cup for the top), add Parmesan cheese.  Stir until mostly melted, remove from heat. 

Stir in rice and broccoli florets, pour into casserole pan, sprinkle remaining 1/3 cup cheese over top.  Bake 20 - 30 minutes at 400 until bubbly and lightly golden on top.

The Methods to Prepare a Chocolate Cake Recipe

Cakes are known worldwide for being the most highlighting components during a celebration. There is no such festivity or carnival being celebrated without the presence of a cake. The raw materials:

Here is a foolproof and simple chocolate cake recipe which can also be filled with jam and whipped cream by replacing the chocolate icing. The main ingredients that are required for the recipe include butter, caster sugar, free-range eggs, self-raising flour, baking powder, cocoa powder along with a little milk. However, if you have kids at home who love the sweet flavor, you can also try icing the cake with the help of dark chocolate, softened butter and icing sugar that can be easily obtained from any of the stores. The preparation of the chocolate cake recipe can be quite easy and can be finished within 30 minutes. Moreover, you need not spend money on the cakes that have been sold by your favorite baker and can instead cook the same with the help of economic components. If you talk about the nutritive value of the cake then you will be amazed to know that it contains about 51g fat, 728kcals, 6.5g protein, 55g sugar, 66.2g carbs, and 0.8g salt.

The method of preparation:

Before starting with the cooking of the chocolate cake recipe, you should preheat the oven to about 180°C. A sandwich tin that is about 2 x 20cm in size can be greased with butter on a butter paper baseline. The butter and sugar can be put in a bowl and the two can be blended together until you get a light and fluffy mixture. You can then add the eggs one after the other and continue the process of beating after adding each egg. Put the flour through a sieve along with cocoa and baking powder. You can also add milk to the mixture until you get a dripping consistency and the mixture can be poured into the respective tins. Bake them for 20-25 minutes in an oven until you get a clean skewer when inserted into the center of the cake. You can take the baked item out of the oven and let it cool for about 10 minutes. However, the cake is halfway ready and the next task is to make the icing over the cake.

For icing, you need to melt chocolate in a bowl kept over a pan of simmering water. When the chocolate melts entirely, you can cool it. In another bowl, beat the butter and the icing cream together with an electric hand whisk until they form a fluffy and light batter. You can then add the molten chocolate into the mixture. Your icing is ready and you can spread a little of it in the midst of your cake. The rest of the icing can be utilized for decorating the surface of the cake.

Decorating a Chocolate Cake

A chocolate cake may be a delightful treat when served toward after taking a meal or at an afternoon which is pleasant, if you desire having something sweet. Use whimsical and fanciful garnishes to make your cake appealing. Select foods which look pretty if paired against dark chocolate backgrounds and are delicious. Ingredients needed for preparing your delicacy include chocolate, metal baking pan, butter, a cup of almonds, spatula, ribbon, fondant and one fruit pound. The others are one cup of wine, two sugar tablespoons, paper lace doily and powdered sugar.

To prepare your cake, make curls first. These comprise of chocolate bits that are folded up, resembling hair curls. Then chop a chocolate bar into minute pieces, thereafter putting these pieces into glass bowl. Introduce 1 tablespoon of butter for each 2 ounces of chocolate. Put glass bowl into pan containing little portion of water.

Next, use open flame to heat this water. Stir this gently until it melts entirely. Allow it to cool for around 30 seconds then pour chocolate over baking pan of metal till thin layer is formed. Let it stand until cooling is achieved. Employ a spatula of metal for pushing chocolate underneath at 45-degree angle. Doing this creates some chocolate curl which may be utilized for garnishing your cake.

Toast one cup almonds in oven for about two to three minutes in order to produce the most refined flavor. After chopping into small slivers, use frosting to ice your cake, which you then may top with chopped pieces of almond. The step following this is creating topping of fondant, which is any piece of rolled icing which one can turn into a desirable shape. Roll out your fondant layer on the cake top until it gets covered entirely. Use ribbon for decorating around cake bottom for a complete look.

Top your cake with alcohol-marinated fruit. Cut up one pound ripe peaches, pitted cherries or strawberries into huge chunks. Place chunks of fruit in 1 cup wine mixture and two tablespoon of sugar. Allow to sit for an hour at least. Chop up fruit into pieces which are smaller then spread across cake with spatula.

Make use of powdered sugar for making lacy pattern. Sugar in powdered form creates dramatic look if applied against dark background. Put paper doily on cake top, onto which also sprinkle some powdered sugar. Lift up doily gently and reveal the pattern underneath it. Blow on chocolate cake top mildly to clear away sugar accumulated on single spots excessively.

Kefi - Levantine Lounge


There I was, once again. Back after ages. Taj Mount road.. The entire building is lit up in hues of blue, and this continues to the roof top as well. as you get off the elevator, you are greeted by the dimly lit swimming pool , beyond which is the bar and Kefi, the restaurant thereon. 


The Exec Chef Siddiqui mentioned they serve food from 5 main regions and stay clear of Italian or other cuisines. This was my 2nd visit here, the 1st one was with a  few friends, we sat indoors and had a good fun meal. Tonight was part of their  Levantine Lounge. This is an initiative that happens every Wednesday, where the outdoor area transforms into the restaurant. there are tables laid out under the stars, soothing music in the background and a wide range of food- cold cuts, cheese, salads, and grills laid out to choose from. Oh, how can i mention the highlight- unlimited WINE...

I promptly ordered a glass of red wine, also got to have a glass of white wine that someone else had ordered but dint want. Strolling around the salad section, we noticed there were quite a few options for vegetarians [ such a treat]., and some of the salads were outstanding. We had multiple helpings of those. We were also served different kinds of bread, dips, and sauces on the table. 

They had quite a few varieties of  cheese as well. I did try the goats cheese, it was quite strong, salty and i kinda liked the taste. There was also the good ol loyal Feta and smoked mozella as well.  perfect for the hot summer days, these were such a relief. I infact skipped the main course, though i did try a spoon of cous cous with Moroccan veg curry from Deepa. While we waited, we yapped about the view, the other restaurants in town and what is coming up. 

The Desserts were a sampler plate- loved the Baklava and honey ice cream. The kheer had a tad too much of cinnamon and I wasnt sure if it fit into the theme. The Harissa was also good [ i remembered trying it at home]

Cookie Making Made Easy My Busy-Mom-Method

In the early 1970s, when I was very young and with small children to care for, I had a few cookie recipes I would make very often, because they were simple recipes, with ingredients I usually had at hand. Cookies are a terrific snack, don't require utensils to pick up and eat and can be made ahead for a party. However, even with all that, they are just not my favorite things to make, because they need to be made either by dropping individually onto the baking sheet, rolling out and cutting (making a mess on the counter and more cleanup), or the often added step of having to chill the dough before working. I like immediacy. I want to mix up a recipe, bake it, clean up and be done.

One morning I made a batch of these cookies, finally popped the last pan in the oven, and set the timer. Itching to get outside for a bit and see what the children were doing, I went out . . . and got distracted. By the time I remembered the cookies in the oven, they had burnt and shrunken down to tiny little black hockey pucks - not even the dogs had any interest in them! It pays not to get distracted when baking. This was the last straw. I had to think of a better way.

I came up with a brilliant idea that I call my "Busy-Mom-Method"; one I use to this day. Rather than take the time to make all the individual cookies by batches, with separate baking times (and time to get distracted), I would roll the cookie dough directly onto a greased baking sheet, working it evenly to the edges and baking it as one large cookie. It is best to use a baking sheet that has three open sides, as it is simpler to maneuver the rolling pin and get the cookie rolled evenly. Keep in mind also, that a little more flour may be needed in the dough to allow for lifting it out and forming into a rough rectangle for rolling. Also, a little extra flour over the surface while rolling helps to keep the rolling pin from sticking. Try not to add any more flour than absolutely necessary, or the cookies will come out denser and harder.

It takes a few minutes more in the oven with one large cookie, but it comes out perfectly. Just watch for the edges to be golden, and the center to be set. With these cookies, I also make a simple icing that is just 1½ cups of confectioners' sugar, a pinch of salt, ½ teaspoon of vanilla and enough water or milk to make a relatively thick consistency (very slow to fall from the spoon). Spread this over the hot cookie straight from the oven. The hot cookie warms the icing, making it melt and spread easily, using the back of the same spoon I used to mix the icing. I am all for less cleanup! Once the cookie cools, the icing dries and hardens, and I just cut the large cookie into small bar or square shapes, and voila; cookies in half the time! Two of my favorite recipes for this method were Hermits and Simple Vanilla Cookies. If you are a busy mom, try this method with any simple cookie dough. The Hermit cookies had raisins in them, but the thickness of the dough was no less than the thickness of the raisins, so it still worked well.

Simple Vanilla Cookies

Makes about 7 dozen

1 cup unsalted butter

2/3 cup sugar

2 teaspoons vanilla extract

1 teaspoon salt

2 eggs

2¾ cups all-purpose flour

Cream butter, shortening and sugar. Add vanilla and salt. Add eggs, one at a time, beating well after each. Stir in flour, mixing well. Drop from a teaspoon 2 inches apart on a greased cookie sheet. Flatten with floured, flat-bottomed glass. Bake in a 375 degree oven for 8 to 10 minutes. Remove immediately from pan.

These Simple Vanilla Cookies are incredibly good, from such a simple recipe. Don't take my word - try them out, either as individual cookies, or with my "busy-mom-method."

Its freshness keeps you asking for more from the very first bite to the last lick. Depending on the season, Natural offers an even bigger treat with its combination of mango or strawberry ice cream (only available in these two flavours), freshly cut pieces of the respective fruit, and a dollop of fresh cream. Absolutely sinful!

Take your pick - single or double scoop, fresh waffle cone or the typical one or just in a cup. The tubs are available in a quantity of half kilo. The reasonable price of the ice creams is one more reason why it can be enjoyed by anyone - from a college student to someone making big bucks.
