[Recipe] Celebrating International Chocolate Day - Chocolate Pancakes

To be honest, am not a big chocolate fan. Am not the kind who will rush to grab that last piece of chocolate or attack the bar once someone hands it over. I don't opt for chocolate ice cream or chocolate cake, i always reach out for the apple pie or anything with berry in it. But then, one morning I walked into my kitchen, pulled out pretty much all that sat in one particular shelf in my fridge and discovered there was a bag of chocolate chips.. That was probably a sign from above asking me to make something with chocolate! Who am I to disagree..

I ended up making Chocolate Pancakes for breakfast and they were yummy..

Ingredients

1 cup flour
1 tablespoons sugar
¼ teaspoon salt
1 tbsp Milk
1 egg
2 tsp butter, melted
1 tsp vanilla essence
Handful of chocolate chips[Ghirardelli]

Process:

1. Combine all the dry ingredients
2. Now add the wet ingredients and whisk well
3. Take a pan, add some oil/ butter and add dollops of the batter in small circles. Allow them to cook for 2mins on each side and voila, fluffly soft delicious pancakes are ready..

You can pretty much add anything you like to the pancakes. I have made using fruits, once with cheese and jalapeno as well.

I had these with honey!!

And guess what, today is International Chocolate Day! Who would have thought :-))

Cake Recipe With Chocolate Flavor

Cooking has never been this easier with the introduction of the Internet. At first I thought that baking cakes was something that was hard and would take my whole day. This was short-lived as a friend of mine informed me that she was simply using the Internet to bake cakes for her family. This surprised me a lot since she was simply searching for a recipe that she thought she could manage. Once this was done, her work was simply to rush to the stores and find the ingredients that were recommended in the cake recipe that she was about to use. I thought over this and I knew it was time to try out my cooking skills. I tried this twice and the best recipe that I found to be easy was the chocolate one. I am quite certain that by following my way of cooking you would definitely prepare something that your family would enjoy. Below is how I cook my chocolate cake:

Ingredients of the cake recipe

1½ serving of butter - softenedSugar- 1¼ spoonfuls of sugarEggs - (number will vary)All-purpose flour - 2 cupsUnsweetened cocoa - 2 cupsBaking powder - 2 spoonfulsOne and a quarter servings of baking soda1½ spoonful of vanilla¾ cup of milk - buttermilk

Filling ingredients:

Pie fillings of cherry - 2 servings3-4 servings of cream that is chilled2 cups of confectioner's sugarMilk chocolate (shaved) - will help in garnishing the baked cake

Cooking tips and procedure for your cake recipe:

The first procedure of this cake recipe is to preheat your oven to 350 degrees Fahrenheit [should be done before you even start preparing your ingredients].

Using a non-sticking paper, you should line your cake pan to ensure that the cake does not stick on the sides of the pan.

Allow the butter that has been mixed with sugar to soften before you beat it using an electric mixer. Add the eggs to the mixture but make sure that you add an egg at a time as you mix well before adding another egg. You then need to add sifted flour, baking powder, buttermilk, cocoa, baking soda as you stir well to ensure that no lumps are formed. Once your oven has reached 350 degrees Fahrenheit, as mentioned earlier, slowly add the batter into the pan and allow it to bake till there is a middle set. Ensure that the bake time is about 40-45 minutes. Use a tooth pick to determine if it is ready or not. If it comes out with some crumbs in it then you will still need to place your cake in the oven for a few more minutes.

Serving

The best way to serve is when it is cold. Cut it into three or four layers for easy storage if the cake is big enough. This will ensure convenience in keeping it in a refrigerator.

Summer Lunch at Sandy's

One of those days when impromptu plans were made and I met a friend of mine for lunch. Neither of us were really hungry, it was proving to be a long day and added it was the sweltering summer sun. After a few messages we decided to meet at Sandy's, wallace garden. Walked in, found a table for 2 near the counter and began catching up. We ordered drinks, she a ginger ale and I went for a Lychee fizz. Hers arrived in a can, while mine was served in a beaker with a pink straw. For someone who hates the sight of pink colour, i enjoyed every sip of this drink, maybe 'cos i love lychee.

For lunch, we chose light food- I ordered for the Tabouleh salad while she chose the Falafel wrap. The place was empty when we walked in, but within minutes it was packed. There were groups of 2-6 filling the tables. A family of 4 arrived, with a little boy and a girl who insisted on sitting in the center, on the bar stool type seating. They had to be helped up by their parents and animatedly began pointing to things on the shelf and talking.

And there came our food. Mine looked green and inviting, hers neatly wrapped up in butter paper served alongside a cucumber dip and potato wedges. My salad was fresh, rich and filled with flavour, loved it.

We skipped dessert and headed home. Now that is what i call Lunch- light and yet refreshing. Sandy's never fails to please.. :-))

If you are wondering where to go for a quick lunch or some yumm desserts, this is whre you should go. They have quite a variety of food and desserts that will leave you licking the plate clean.. Not only is the food good, but service is also top notch. The staff leave you alone, without constantly coming over asking if you need anything or if all is good....

The Methods to Prepare a Chocolate Cake Recipe

Cakes are known worldwide for being the most highlighting components during a celebration. There is no such festivity or carnival being celebrated without the presence of a cake. Hence, this is one of the food items that are liked by young and old people equally. You can also serve cakes as desserts during the parties and it would be more appreciated if the dessert you serve is a chocolate cake. Chocolates remain one of the favorites of children and hence chocolate cakes are always a success among the kids and the youngsters. If you have been looking for a simple chocolate cake recipe to try at your home, here is the one that will make your wish come true. You can win the hearts of your loved ones through the preparation of a birthday cake at home.

The raw materials:

Here is a foolproof and simple chocolate cake recipe which can also be filled with jam and whipped cream by replacing the chocolate icing. The main ingredients that are required for the recipe include butter, caster sugar, free-range eggs, self-raising flour, baking powder, cocoa powder along with a little milk. However, if you have kids at home who love the sweet flavor, you can also try icing the cake with the help of dark chocolate, softened butter and icing sugar that can be easily obtained from any of the stores. The preparation of the chocolate cake recipe can be quite easy and can be finished within 30 minutes. Moreover, you need not spend money on the cakes that have been sold by your favorite baker and can instead cook the same with the help of economic components. If you talk about the nutritive value of the cake then you will be amazed to know that it contains about 51g fat, 728kcals, 6.5g protein, 55g sugar, 66.2g carbs, and 0.8g salt.

The method of preparation:

Before starting with the cooking of the chocolate cake recipe, you should preheat the oven to about 180°C. A sandwich tin that is about 2 x 20cm in size can be greased with butter on a butter paper baseline. The butter and sugar can be put in a bowl and the two can be blended together until you get a light and fluffy mixture. You can then add the eggs one after the other and continue the process of beating after adding each egg. Put the flour through a sieve along with cocoa and baking powder. You can also add milk to the mixture until you get a dripping consistency and the mixture can be poured into the respective tins. Bake them for 20-25 minutes in an oven until you get a clean skewer when inserted into the center of the cake. You can take the baked item out of the oven and let it cool for about 10 minutes. However, the cake is halfway ready and the next task is to make the icing over the cake.

For icing, you need to melt chocolate in a bowl kept over a pan of simmering water. When the chocolate melts entirely, you can cool it. In another bowl, beat the butter and the icing cream together with an electric hand whisk until they form a fluffy and light batter. You can then add the molten chocolate into the mixture. Your icing is ready and you can spread a little of it in the midst of your cake. The rest of the icing can be utilized for decorating the surface of the cake.

Decorating a Chocolate Cake

A chocolate cake may be a delightful treat when served toward after taking a meal or at an afternoon which is pleasant, if you desire having something sweet. Use whimsical and fanciful garnishes to make your cake appealing. Select foods which look pretty if paired against dark chocolate backgrounds and are delicious. Ingredients needed for preparing your delicacy include chocolate, metal baking pan, butter, a cup of almonds, spatula, ribbon, fondant and one fruit pound. The others are one cup of wine, two sugar tablespoons, paper lace doily and powdered sugar.

To prepare your cake, make curls first. These comprise of chocolate bits that are folded up, resembling hair curls. Then chop a chocolate bar into minute pieces, thereafter putting these pieces into glass bowl. Introduce 1 tablespoon of butter for each 2 ounces of chocolate. Put glass bowl into pan containing little portion of water.

Next, use open flame to heat this water. Stir this gently until it melts entirely. Allow it to cool for around 30 seconds then pour chocolate over baking pan of metal till thin layer is formed. Let it stand until cooling is achieved. Employ a spatula of metal for pushing chocolate underneath at 45-degree angle. Doing this creates some chocolate curl which may be utilized for garnishing your cake.

Toast one cup almonds in oven for about two to three minutes in order to produce the most refined flavor. After chopping into small slivers, use frosting to ice your cake, which you then may top with chopped pieces of almond. The step following this is creating topping of fondant, which is any piece of rolled icing which one can turn into a desirable shape. Roll out your fondant layer on the cake top until it gets covered entirely. Use ribbon for decorating around cake bottom for a complete look.

Top your cake with alcohol-marinated fruit. Cut up one pound ripe peaches, pitted cherries or strawberries into huge chunks. Place chunks of fruit in 1 cup wine mixture and two tablespoon of sugar. Allow to sit for an hour at least. Chop up fruit into pieces which are smaller then spread across cake with spatula.

Make use of powdered sugar for making lacy pattern. Sugar in powdered form creates dramatic look if applied against dark background. Put paper doily on cake top, onto which also sprinkle some powdered sugar. Lift up doily gently and reveal the pattern underneath it. Blow on chocolate cake top mildly to clear away sugar accumulated on single spots excessively.

How to Make Homemade Chocolate Icing

Everybody knows that the best part to any cake or cupcake is the icing. Everybody also knows that homemade icing wins over those sold at stores. That is why every cook should have their very own homemade chocolate icing recipe to whip up on a moment's notice. Once you have this basic chocolate icing mastered, you can play with it a bit to make variations like mint chocolate, mocha coffee, and more!

This simple and basic chocolate recipe will surely be a favorite of yours for years to come. The only things you need are a saucepan, a stove, a mixer, and a few quality ingredients.

First, start with the following ingredients:

Granulated sugar - 1 cup

Cocoa - ¼ cup

Butter - ¼ cup

Milk - ¼ cup

Vanilla extract - 1 teaspoon

For best results, always use quality ingredients. They make a big difference in a simple recipe like this one because there are so few ingredients. Try to use real butter, real vanilla, real cocoa, and whole milk if you can. It will taste the best this way.

If you absolutely need to cut calories, you can substitute the sugar for splenda, margarine for the butter, and use skim milk. The result will be slightly less creamy, but still tasty.

In a big bowl, mix all of the ingredients except for the vanilla. Transfer mixture to a large saucepan and bring to a boil. Boil for one minute then remove from heat. Add the vanilla extract after.

Let it cool partially for a few minutes, but be careful not let it cool all the way. You will need it a bit warm for the next part. For about three minutes, beat the mixture. You can do this manually, with a hand-held electric mixer, or a table top electric mixture, whichever you have available or prefer. You will want to continue until the icing is spreadable in texture.

Now you can move on to icing your cake, cupcakes, brownies, or cookies. This recipe for icing usually results in a thicker, creamier icing perfect for cupcakes and Brownies, but use it for whatever you like. No one will judge you if you only want to eat the frosting by itself. If you want to try the variations, add the flavoring like mint, coffee, hazelnut, etc. to the mixture at the same time you add the vanilla. The possibilities really are endless with this simple chocolate icing recipe.

Zuka, Pondicherry

"Nine out of ten people like chocolate. The tenth person always lies." - John Q. Tullius

Imagine being surrounded by Chocolates- in their true form, as mousse, cakes, pastries, drinks and much more? It would be heaven for those who love Chocolate. Now, even though I am not crazy about Chocolates, I don't mind indulging once in a while.

When I was visiting Pondicherry last week, a friend of mine who lives there insisted on taking me to this new dessert place that she said was "awesome". So, we drove down towards Mission Street, almost to the end and there was "ZUKA". My friend mentioned they were earlier called Choco- la.

We walked in and were greeted by Srinath Balachandar, the man behind Zuka. He also owns the cafe next door where they serve Sandwiches and quiche, soon they will be serving Coffee he told us.

Simple interiors, a grand display counter and about 2-3 tables with chairs to sit and indulge in. The display showcases the variety of desserts made using chocolate, each one such a treat for the eyes. Srinath went on to tell me about his favorites and those that he recommends. He suggested I try the Hot chocolate and I took him up on it, while my friend went for the "awesome cake", it was a multi layer cake with hazelnut filling combined with chocolate layers.

My hot chocolate arrived within seconds, a small cup with the drink, served alongside two small square cups made of chocolate containing chocolate shavings [to be added to the drink], a normal spoon and a spoon made of chocolate [that melts as you stir] .. It was hot, rich, sinful and divine.

The Awesome cake did full justice to its name. Every layer was different and the flavours came together beautifully.  [the one on the right in the photograph below]

Art decor at ZUKA...

A chocolate bouquet...

Wait, am not done. You are in for a surprise. The next day, once again, just before bidding Pondy adieu we decided to visit Zuka. Yes, twice in 2 days.. :-)

This time we decided to try something different. I once again turned to Srinath who recommended the Expresso mousse dessert, it came in a shot glass and with every spoonful there was a burst of coffee in my mouth.

My friend ordered the Crunchy Caramel cake, a soft cake where the base had been soaked[rather sprayed] with caramel sauce and topped with crunchy caramel bits. Yumm...

Started in 2009, "Choco- Là" by Srinath Balachandran is a place that does true justice to Chocolates. While chatting with him, came to know he went to France and worked in the master chocolate maker Mr. Jean Luc Klugesherz's chocolate kitchen. He imports all the raw materials from Belgium and makes each of the items here in Pondicherry.

Choco Là gift boxes, T-shirts and mugs are also available! They even had a portrait of Thalaivar, Rajinikanth made from Chocolate up on display.

Most items on the menu are priced between Rs50 and Rs80. Next time you are in Pondy, make a beeline for Mission Street, and you will find Zuka right there... It is also adjacent to Pasta Bar Veneto.

The Dessert Studio, Chennai

The sweetness of chocolate, tartness of strawberry and the added flavour of sweet cream was what i felt in my mouth with the 1st bite of the crepe. I was at Dessert Studio, the newly opened place in Khader Nawaz Khan road [ it is in the same campus as Espirit, tucked away on the 1st floor, with the entrance on the side]

You could miss this place  if you dont know of it or dont notice the name board in the front. Completely white, the burst of colour on the ceiling is such a feast for the eyes. Simple decor, few white tables with cute egg kinda designer chairs, and a self service counter. That is all you find here. If you are the observant kind like yours truly, as you open the main door, you will notice the wall with three categories mentioned on it-  Choco Berries (UAE), Yogo-D-Lite (Italy) and Shake-a-Take (UK),- three different banners, three times the number of options to choose from.

Founded by Food Spreads Pvt Ltd’s Jinshad Haziy, Rishdin Nasir and Anas Nasir, the Dessert Studio offers quite a variety of Shakes, Yoghurt Ice creams [which came in 3 sizes] and Bites [Crepes, waffles and desserts- Apple walnut crumble and such...one that was in their display reminded me of Theobrama]. The interesting thing is each of the three banners have a seperate billing counter, good or bad? Both i guess. It is a bit cumbersome if you want to place an order that has items from across their menu. Imagine hopping from one counter to the other, you will be tired and frustrated. Luckily, me and my friend headed towards the Choco Berries section. We chose the Strawberry Belgian Chocolate Crepe and waited a few minutes before it was ready.

I love Strawberries, i like chocolate and i love Crepes, so this was just perfect. The crepe was thin and light, filled with rich chocolate [ which was not too sweet]. I just wished it was  bigger and lasted longer than 10 bites. :-) [That is just greedy me].

Friend wanted to take something home for her kids, and since they loved ice cream, she chose Strawberry Yoghurt ice cream only to be told they dont parcel them [as the ice cream melts and taste is lost]. She then settled for Milkshakes, Kit Kat milkshake since her kids liked the chocolate the most.

It is a nice place, no doubt, with a limited menu, but something they seem to have mastered. I hear they also plan on launching a brunch soon, just hope they dont dilute the menu and start offering everything under the sun and become one of those places we see around every corner.

Ambiance: 7/10
Service: Self service [cant reallly rate it.. but polite staff who are ready to help]
Price: 5/10 [ The Crepe we ordered was Rs170 not incl tax, the shakes i think were Rs80]
Overall Rating : 6/10 [but nothing new, nothing that makes you go WOW]

Cafe Chokolade, Egmore, Chennai

Last week, when a friend and i were in Egmore, finishing up some errands, we were tired hungry and thirsty, and the 1st place that came into our horizon was Cafe Chokolade, and since we hadnt been here before, we walked in.

I guess they were having their daily powercut, as the AC was off, and a fan was keeping the place cool.  Aside from 2 other guys, the place was abandoned. We sat ourselves in the sofa, and that is when i spotted the black plastic bag with JENGA. I promptly began stacking up the wooden blocks while my friend was glancing through the menu card. There was just way too much chocolate there, and lost for choice, we asked the man behind the counter to recommend something cool and refreshing.

When we asked him if they had hot chocolate or something similar, he replied in negative saying they had thick shakes.

Ok... my next question was do you have something simple and light, he again replied in negative saying "no, you cant drink any of our shakes, you need to eat them". I was tempted to try one of the dry fruit shakes, but my thoughts were interrupted when

He went to ask - "Is this your first time here?"

We replied in affirmative

He then continued saying "you should have the Chokolade B", its the best, made with chocolate, and topped with chocolate pieces, it is thick and really good. We have our own factory, where the chocolate and other bases are made he went on.....

Unsure, we went with his recommendation and ordered a Chokolade B...

Within seconds, our token number flashed on the little window at the end of the hall, and i picked up our drink, that looked quite sinful. Alas, that was it... The chocolate shavings and pieces were just creamy, and so was the shake.. It was missing any kind of flavour... My friend and I dint have the heart to waste it, but couldnt finish the drink and walked out quite unsatisfied and disappointed....

I must confess- I am not a chocolate person, and even if someone wants to lure me with chocolate, they better be talking about Dark chocolate.  But i do know taste, and have had quite a few chocolate based desserts and drinks before....

Well, i shall not strike off this place completely, shall visit once more and then decide!
