Granola with Almonds & Apricots Recipe


I love eating yogurt.  I love it even more when I have some homemade granola or some sort of topping for it.


This recipe tasted wonderful with the apricots.  You get the smoothness from the yogurt, the crunch from the oats and nuts, and then the bit of chewiness from the cranberries and dried apricots.  Seriously good granola. 




Granola with Almonds & Apricots Recipe
Adapted from Kitchen Parade

3 cups old fashioned oats (not quick or instant)
1 cup toasted almond slivers
1 cup coconut
3 tbsp. sunflower seeds
1 tbsp. cinnamon
1 tsp. salt
3 tbsp. olive oil
3 tbsp. maple syrup
1 tbsp. vanilla
1 cup dried apricots, cut into slivers
1/2 cup dried sour cherries or dried cranberries

Preheat oven to 350.  Spray two baking sheets with cooking spray.

In a large bowl, combine the oats, nuts, coconut, seeds, spices and salt.  With a bowl, carve out a well in the center and pour the olive oil, maple syrup and vanilla into the well.  Stir well to coat everything. 

Transfer mixture to the baking sheets and bake until golden brown about 20 - 25 minutes. Careful not to burn! While mixture is still warm, stir in the apricots and dried cranberries.  Stir well to distribute the heat and then let cool.  Store in an air tight container and refrigerate.
