Southwest Tortilla Pizzas



I love a good pizza.  Make it a healthy, low calirie vegetarian pizza and I love it even more!


You can make it in the oven as the original instructions stated, or you can just cook it on the stovetop. We are used to toasting our tortillas in a skillet so this was easier for us to do. 

This was very simple and completely delicious!



Southwest Tortilla Pizza Recipe
Adapted from Taste of Home

1 can (16 oz) refried beans
1 can (4 oz) chopped green chiles
1/4 tsp. garlic powder
1/4 tsp. ground cumin
1/4 tsp. chili powder
Flour tortillas (corn tortillas if gluten free)
Salsa
Green pepper, chopped
Onion, chopped
Cheddar cheese, shredded

In a small bowl, combine the beans, chiles and spices. 

Oven: Place tortilla on a baking sheet, spread with bean mixture.  Top with another tortilla.  Spoon salsa over the top, sprinkle with onion, pepper and cheese.  Bake at 400 for 10 - 15 minutes or until cheese is melted.

Stovetop:  Toast 2 tortillas separately in a skillet.  Spread one of them with the bean mixture, top with toasted tortilla.  Spoon salsa over the top, sprinkle with onion, pepper and cheese.  Put back on skillet on low, cover until cheese is melted. 

I estimated one of these pizzas to be around 400 calories.  We got 5 pizzas out of this and only used a small bit of cheese.  Tasty and filling.
