Cowboy Mashed Potatoes





Mashed potatoes.  One of my favorite comfort foods. 

Tina from Moms Crazy Cooking asked us to make mashed potato recipes today for the Crazy Cooking Challenge.


My version has the nummy butter and cheese that you love, then also piled with extra veggies to make it even more delicious and healthy. 


Cowboy Mashed Potatoes
Adapted from Lynn's Kitchen Adventures

2 lbs. potatoes
1 fresh jalapeno pepper, sliced
12 oz. baby carrots
1 tbsp. garlic
1 cup frozen corn, thawed
2 tbsp. butter
1/2 cup shredded cheddar cheese
Salt and pepper to taste

Place potatoes, jalapeno, carrots in a large pot, cover with water and bring to a boil over high heat.  Cook 20 - 25 minutes or until potatoes are tender. Drain water from pot. Add garlic, corn and butter.  Mash the mixture with a potato masher until butter is melted and potatoes have reached desired consistency.  Mix in cheese, salt and pepper.

Total calories = 2214 calories
6 servings = 369 calories
