Peppermint Chocolate Chip Cookies




Last holiday season we found mini candy canes on sale.  They were $.25 for a big box.  We bought 6 big boxes.  That's a lot of candy canes.  We gave some away, ate some of them, made Peppermint Ice Cream, but we still have a lot of candy canes left in the house.  

One of my kids suggested cookies.  I thought it was a brilliant idea and the kids started smashing away at the peppermints.  The cookies turned out excellent.  There was a bit of debate whether or not there was too much peppermint but most of us thought this was perfect.  




Peppermint Chocolate Chip Cookie Recipe

1 cup butter, softened
1 cup brown sugar
1/2 cup sugar
2 eggs
1 1/2 tsp. vanilla
3 cups flour
1 tsp. salt
1 cup crushed candy canes
1 2/3 cup semi sweet chocolate chips

Cream butter and sugars until light and fluffy.  Add the eggs, beating well. Beat in the vanilla.  

Sift the flour, baking soda and salt together in a small bowl.  Add the dry ingredients to the butter mixture and mix until just combined.  Fold in the chocolate chips and crushed candy canes. 

Scoop dough onto baking sheets lined with parchment paper.  Make sure you use parchment paper as they get really sticky when they are hot.  Bake 12 - 15 for smaller cookies, 14 - 17 for larger ones or until the tops are a light golden brown.
