Microwave Peanut Brittle


I've never made candy.  I don't own a candy thermometer. But of course homemade candy tastes awesome.  Lucky for us, my kids have a grandma who makes candy every year.  A lot of candy. 

This year my 12 year old son fell in love with the peanut brittle.  He's been enjoying cooking and baking more so he asked grandma for the recipe.  Her recipe takes a long time and and does indeed require a candy thermometer.  She recommended a microwave peanut brittle and my son was eager to try it.  I think he asked me about it everyday for a week.  We finally bought the ingredients and he made it.

Making homemade microwave peanut brittle is very easy and the results were fantastic.  We polished off the first batch with ease.  Then we made it again to give to friends.  Even though we know how to make peanut brittle now, it's still not going to stop us from going to Grandma's. 



Microwave Peanut Brittle

1 cup white sugar
1/2 cup light corn syrup
1 cup salted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Butter a cookie sheet.  Combine sugar and corn syrup in a large bowl and microwave on high for 4 minutes.

Stir in peanuts and microwave on high for 3 1/2 minutes.  Stir in butter and microwave for 1 1/2 minutes. 

Immediately stir in baking soda until light and foamy. Quickly pour onto cookie sheet and spread thin.  Cool completely and break into pieces. It takes about an hour or two to cool completely.
