Oreo Cheesecake Bites & Turtle Pecan Pretzels









I love finger food.  Anything bite size just makes me happy. It's cute.  It's also easy to eat way too many but it's okay.  Their tiny, right?









So I headed off to a BBQ and made a bunch of these Oreo Cheesecake Bites and the Turtle Pecan Pretzels.  I mean to plate them pretty and get some cool pictures but it just didn't happen.  I snapped some quick shots, brought them to the BBQ where they were quickly devoured. 





I also meant to make Turtle Caramel Wafer Cookies but I foolishly thought that I had PLENTY and didn't make them.  They went so fast that I could have, and should have, made twice as many.  Oh well.  I included the recipe anyways for all 3 of the treats below.












Oreo Cheesecake Pretzel Bites Recipe


Adapted from Picky Palate





21 whole Oreos


3 oz. cream cheese


Square pretzels


Chocolate chunks or chips, melted


Sprinkles





Place Oreos in a food processor until finely ground.  Mix crumbs and cream cheese until dough forms.  Pinch about 1 tbsp. of dough and form into a little square. Place onto a pretzel, then gently press top pretzel to close.  Top with melted chocolate and sprinkles or Oreo crumbs.  Chill until chocolate has hardened. This makes about 30 - 35 Oreo bites.

Turtle Pretzels





About 50 square pretzels


1 bag of Rolo candies, (get the kids to unwrap them all)


Pecans or M&M's for tops





Preheat oven to 350.  If using pecans, toast pecans on a baking sheet for about 4 minutes, stir then bake for about 4 more minutes, watch closely, don't burn. 





Place pretzels on another baking sheet.  Top each pretzel with 1 rolo candy, right in the middle of the pretzel.  Place in the oven for 3 minutes, you don't want the candy to completely melt so 3 minutes is plenty. Take out of oven and immediately push a pecan half or an M&M on top of each candy, squishing the rolo to slightly flatten.  Cool them and serve.

Turtle Caramel Wafer Cookies (not pictured)





Nilla Wafters


Caramels, (get the kids to unwrap them)


Pecan halves





Toast the pecans in oven for several minutes but don't burn.  Place Nilla Wafers on plate.  Melt caramel in microwave. Spoon a bit of caramel over the Nilla Wafer and place a pecan half on top.  Cool and serve.

Holidays projects

Entro hoje de férias - super feliz, claro! Tantos programas para fazer, vai ser óptimo! Um desses vai ser montar e pintar o beliche do quarto das meninas - e, como vou ter de mudar a mobília de sítio, já me apetece mudar também o papel-de-parede, pintar uma das paredes, pôr uns quadrinhos com umas aguarelas com pássaros, lindas, os livros numas estantes que espero que o meu cunhado possa fazer, um tapete novo... Enfim, nem parece que remodelei o quarto da Carlota há 2 anos (ver aqui)...

Se quiserem ver a evolução deste novo projecto, passem por aqui durante os próximos dias. Todas as dicas de sites / blogs / lojas inspiradoras são mais do que bem vindas.

Today I start my vacations, I'm super happy! I have so many plans and so many things to do! One of those things is to assemble and paint the girls' bunk bed - and I feel like redecorating the whole room again, as I have to change the place of the furniture. I'm thinking of a new wallpaper, repaint the free wall, beautiful birds watercolors, new book shelves that I'm hoping my brother in law can make and a new rug... Well, one would never imagine that Carlota's room has been decorated 2 years ago (here)...

Pea and Peanut Salad with Bacon and Beans




I don't make a lot of peas. The husband doesn't like peas so I just avoid them.  I couldn't resist this though when I saw the recipe.

Hubs works some evenings so I just waited until then. I don't think he even knew it existed in the house.   


I, of course, added a can of beans, to up the protein.  Oh and the bacon was oh so good in this. Bacon truly does make everything better. 


I ate this the first day on a corn tortilla as a wrap.  Then the leftovers I ate with a bit of lettuce, just as a salad.  Both were awesome and I'll make it again. When the husband works of course.  :-) 




Pea and Peanut Salad
Adapted from Taste of Home

1 pkg. (10 oz) frozen peas
3/4 cup dry roasted peanuts
1 cup chopped celery
6 bacon strips, cooked and crumbled
1/4 cup chopped red onion
1/2 cup mayo, light
1/4 cup prepared zesty italian salad dressing
1 can white beans, drained and rinsed

Total calories = 1980 calories
11 - 1/2 cup servings
180 calories per 1/2 cup
1/2 cup with 100 calorie tortilla = 280 calorie wrap

Cheese Scallion Muffins


Cheesy muffins.  Yum. 

These came out perfect and were enjoyed by all. I cut the oil a bit from the original recipe and next time I would add a bit more salt but otherwise they were perfect.

Cheese and Scallion Muffins
Adapted from LimeCake

1 1/2 cups flour
2 cups cheddar cheese, grated (8 oz)
1/2 tsp. paprika
1 tsp. baking powder
1/4 tsp. salt
2 scallions, sliced
1 egg
1 cup milk
2 tbsp. olive oil

Spray muffin tray with cooking spray.  In a large mixing bowl, gently toss cheese, flour, baking powder, salt, paprika and scallions.  In a medium bowl, whisk egg, milk and oil.  Add wet ingredients to dry and stir gently to mix until just combined and no flour patches remain. Don't overmix.

Divide among muffin cups and bake for 15 - 20 minutes or until golden and lightly springy.

Total calories = 2018 calories
12 muffins = 168 calories per muffin

Rule, Britannia!

My new vintage-style silk roses and this lovely wall plate that is going to look gorgeous in the living room! The roses are so pretty that I like to see them loose on my sideboard, like a bunch a flowers freshly picked from the garden... (I wish!)
